Another job well done! The only thing I do differently is soak the potatoes for an hour in water and citric acid to keep them from darkening. And yes, buying commercial veggies is a crap shoot. Sometimes potatoes look beautiful on the outside, but the insides are full of spots. I've also had issues with carrots and tomatoes, but sometimes we simply can't grow what we need or we have a crop that fails. Regardless, some is always better than none, and 22 quarts in the pantry is a definite win!

Here in the northeast potatoes and onions from store have been horrible!...from every store, no matter how good they look. Luckily my neighbor is a potato farmer😂.

They taste great. Texture of oven roasted. I even do hashbrowns this way. Love them. Was not fond of the mushy water packed.

Great video Bev!! We all learn from each others wins and losses. Homesteading with the Zimmerman's did a vid on dry packed potatoes, she used new ones and soaked them for quite awhile in water. She said it helps the potatoes not to be mushy when you use them. So thankful for all of you who take the time to share your experiences. God Bless!!

I love watching the Zimmerman's channel. I always soak my potatoes and keep rinsing them until the water is clear and all the cloudiness has gone away. It really helps the potatoes to can better. I like to take the potatoes after they have been canned, then toss with a little olive oil, salt, pepper and oregano and pop into the air fryer. So crispy and delicious.

I have been dry canning my potatoes for a while now. To me they come out great. I have done wedges, diced and French Fry cut. Just rinse them really well and dry for French Fry cut.

My son and daughter in law had 400 lbs left over from their french fry wagon this year and gifted me 150 lbs this week. And told me they have more for me when i am ready. Lots of hard but very much worth it. Thank you

The potatoes that I put up this past week were exactly like that. I don't know how much i lost out of the 100 lbs but i wasn't happy.

You really should soak then at least 3 times in cold water for 45 minutes each soak. After each soak rinse well. Then lay out to dry or dry with paper towels....

I'm researching this method. It's a game changer. No more draining off nutrients. And the time it'll save from debubbling. Look at the savings of water. We're all trying to do what we can ecologically and financially too. Yes, a real game changer. I wonder if they will last as long as the ones in liquid?. Thanks for sharing

I dry packed sweet potatoes and my husband loves them! 1 pint dry packed was plenty for him. He can mash them or air fry.

I am so lucky, I have a couple farmers that are next to me and about every 3 or 4 yrs they plant potatoes for a local company. The company only wants a certain size so all the rest are left in the field till farmer can turn them under. The farmers don't care if you go pick up the potatoes. So hubby and I do. Canned like 40 qts last yr and about 20 pints. My grown kids beg for them and bring me jars to can them in. lol Going to do it again this yr.

hey screw the usda. i canned butter, banana bread, all sorts of stuff they said wasn't recommended and i'm still kickin'. for me, i'm more into dehyradrating. i can cram 4 pretty big pumpkins into a quart jar... same for potatoes... but nice to have some options.

Absolutely dry can my potatoes and will never go back. They are so versatile and have never had spoilage. I peel and have done hadhbrowns and chunks. This year I will be also doing french fries.

great job i have been doing alot of research and i have seen soaking in citrus acid for 45 mins to help from ex-stream browning,besides soaking in water with alittle salt,then rise and toss in alittle salt before canning.I'm going to give this a try and mark my jars to see what is a better result.

We dry can potatoes and add dried seasoning and a little butter. They are fantastic. If you’re afraid of canning go eat at McDonald’s, their food is safe.

Good video, Mrs. Volfie! Now I know what 'Dry Canning' is! I can understand about the four jars you lost, we get that discolouration here in New Zealand as well! That happens I believe because of the ground being saturated. I don't know what the spuds look like after an infestation of Potato Blight. Maybe they need to leave that patch of ground alone for a season or two...

I have not used store bought potatoes for canning, I grow Yukon gold and Pontiac reds I will be harvesting my potatoes in about three weeks, I canned 27 jars of potatoes about 2 months ago, I did the water method want to try the dry method

In the middle of canning two huge bags of potatoes. The price was awesome, but they are small, making them a pain to peel. BUT...we will have a lot of taters on the shelf for the Winter!

I always thought the water was the conduit by which the temperature of the inside of the potatoes get to the degree it needs to be to kill botulism. Would you feel safe eating these straight from the jar or would you make sure to cook for 10 minutes after opening?

Personally I would hesitate to do it but You do You. Thinking that if there were no issues they would be commercially available as well but far as I know they always come in liquid.

I could use some advice here. I just dry canned (pressure canned) potatoes for the first time. I cut off all blemishes before I put in jars. When I pulled jars from the canner, there were brown spots on them. Almost every jar. Does this mean they're bad? I don't understand why there's blemishes on them now when there wasn't when I filled the jars. I didn't put lemon juice or citric acid in the water when they were soaking. Would that be why?

Maybe someone can tell me, since siphoning is not an issue with dry packing then it’s not necessary to let the pressure come down on its own. Is this correct?

Iv tried this with store bought potatoes. Hated them. This sat im going to go buy some farmers market potatoes and try it again. Im wondering if it was just the commercially grown potatoes im not liking canned. Do a side by side and see if theres a difference.

I don't like buying potatoes or head lettuce this time of year. They both have what I call "leprosy" because of all the brown spots and splotches. I know the potatoes are cheap right now because they have to make room for this years harvest.

I tried one jar like this in with my other regular ones. They turned gray like if they were stuck above the water. I won’t do it again.

Unless you know a dedicated, experienced [many years] knowledgeable water canner I would not do it. Those who do it safely usually have a proven family track record in how to do this safely.

I don't know about the other folks that watch you but for about 4 years, the potatoes in our area have been horrible. They are shipped in from wherever. I try desperately to get potatoes from local farmers when I can but it is not always possible. I doubt that I have more than 2 or 3 bags of decent potatoes in the last 4 years or so. I end up cutting much away or the potatoes are unfit to eat.

Put regular cheap rice in an old long sock. Sew or tie it shut. Then put it in the microwave for a little bit at a time to heat it up. Great hot pack. You can also put one in the freezer for a cold pack. You should swap back and forth. 20 minutes max for either one of them. I also have a small dog that I have taught him to sleep in the bed with me, laying up against my back where it hurts the most. Constant warming on an aching back.

Castor oil on a flannel cloth an lay it on the area that hurts wrap over with plastic wrap leave for 24 hrs hope this helps

A close friend did this ~ she peeled some jars....she left other jars unpeeled, she diced them up a little smaller, so she could get more in the jars, and yes............she did mention cut out all the blemishes. Then she par boiled them for a few minutes, then she tossed them in a fryer to get some color, which at this point she salted them. They were beautiful in those jars I'm telling you, dicing them a little smaller is the way to go. Then she canned them. When she opened one a year later, yes, a year later and put them in the fry pan, and some in a stew....you were eating at a 4 star restaurant you'd think. Yes. It works. It really does. Oh yes, those were Russets. Happy Canning!!

I couldnt find anywhere where this method was tested and approved to be safe. This is why i wont eat at potlucks or take canned food from other people.

You can raw pack meat. It is the same idea. the INTERNAL temp of the jar ( when all proper steps are taken) reaches the 240 degrees. the temp that kills botulism. No you would never see me Boil Bath canning potatoes..water in the jar or not. Because THOSE jars only reach the internal temp temp of boiling water ( 215 Degrees ) No matter HOW LONG YOOU BOIL THEM! This is why I learned to pressure can 30 years ago.But you do you!

I don't put anything in but the potatoes. No butter/ghee or salt. The texture is like roasted potatoes. Absolutely loved them. Did chunks and hashbrowns.

The water in the jar conducts the heat to the interior potatoes. There is no guarantee that all product is thoroughly heated to 240° for the recommended time period. You do you, but remember that newbie canners are watching you. I'm a seasoned canner and won't take the chance of poisoning my family or others that occasionally grace my dinner table.

Exactly! She is considered one of the KZbin experts and someone I considered a near consumate professional when it came to canning...with the exception of canning celery... which is not approved either. I learned a lot from Mrs V about canning. The "you do you" excuse is lame when you are actually explaining step by step how to dry can potatoes.

by the way "tairos" (sound) is not a word, is not even in the diccionary...the diccionary and the language when used properly is potatoes...tairos is a slang and when using slangs the purity of the language is getting kill....like af.folks that use all the slang when talking and then one can not understand them even for the most basic logical conversations.

Because when they go on sale for a dollar twenty 54 a ten pound bag, it's good to take advantage of and have in the pantry for when prices go up. And they're always going up!
