Canning Seasoned Pork Loin | Par Boil Method

Today we will be pressure canning lightly seasoned pork loin using the par boil method of canning. Though the pork loin is a lean cut of pork, par boiling helps to remove any excess fat from the meat, which causes the snowy debris in the jars when canning meat. Pressure canning is required when canning any type of meat, and Tina will cover the canning time and canning pressure required for the size Ball / Mason jar you are using. This is an instructional Canning 101 type video, however, you should always follow approved canning methods. Please note that this is also not a " how to " video, and more of a "how we do" video. Seasoned pork requires the following seasonings: Salt, Garlic Powder, Onion Powder, and Black Pepper. We hope you enjoy this recipe for pork loin, making it shelf stable for a year or more.

Thank you both for your military service. My 74 yo brother, a disabled Marine Corps Vietnam vet, passed away almost a year ago. I worked as an echo tech trainee with a retired Navy Corpsman (he became an echocardiography tech) who never served on a ship in his 20+ years. His first assignment was to a Marine Corps group and somehow that “marked” him to only serve with Marines. I thought that was quirky to be in the Navy and never be on a ship. My younger brother served on the USS Constellation.

For a Navy Corpsman, time spent with the Marines counts as your "sea time" and had I not deployed with my Marines, I would likely have never been on a a ship either...

Thanks for making this video. Most pork videos I see are cold packed and I didn't want that. I'm new to canning and I now just learned why parboiling pork is good good for canning from watching yours! I also really enjoy canning when I have time.

New subscriber here! Actually I do find canning videos exciting and fun. I can usually learn something and I learned from you about "snow" in my jars. I have 18 and a half pints of pork in the canner now. Like you, I find a way to put those scraps to work too and can them up for my pets or chickens. The old timers were said to use everything but the squeal and that's how I want to be too.....a good steward of what God has provided. Thank you for the video. I'll be watching for more and catching up on some of your previous ones. God bless. (By the way, I lived in East Tennessee for about 6 years in the Maryville/Alcoa area. Loved it there but came back to Central KY to be with my family.)

The secret bonus is the salt in the par boil helps pull out the blood too, and that will eliminate that rubbery pork people sometimes get when they can it...

Hey Tina I would cool off the water were you power boiled the pork and get the lard off the top. Then use the water from that in my jars just for added flaver. Good job and thank you and mark for your service.

We have tried that in the past, and I absolutely agree it is a great idea in principle, but there is a lot of "snow" that does not float to be removed (the same way it sinks and moves around below the surface if it gets into your jars). You actually have to run the water through cheese cloth to remove it... That said, the pork is far from fully cooked on a short par boil, and still imparts a wonderful flavor to the broth it is canned in...

I've only raw packed non ground meats. I'm definitely going to do more parboil. Many recipes won't matter how things look, but some it makes a difference. My dogs get scraps and soft bones after making bone broth. If I've canned a lot, there's often a lot for them. I like to mix it in the kibble. I'd never thought to can it. That will save me precious fridge and freezer space. Thank you.

I cold packed 4 pork loins just recently. The store shill has them on sale, BOGO free....so I'm going to try your method to remove the fat mor thoroughly.....I've been told NOT to season in the canner, as, over time, the seasonings become more POTENT....also, if you want to use the pork in another recipe, the flavors from the seasonins you canned with might not work well. Loved the video and learned a lot.

I really enjoyed watching your process. It's easy to get in a habit of only doing something one way. You've given me Food for Thought! And a wonderful way to can pork! I am not sure what you would do with canned pork, but I might make some as it seems as it is more affordable than beef. I am still learning at age 75... I have never tried to can pork yet...

We are really partial to sweet and sour pork made with it... You can also shred it for sandwiches... I really like making it into just spicy pork bites (like boneless wings, but with pork)

Meat always seems to swell more than you might think, so rather than having it blow out, I just leave a little extra head space....

Tina, I am not a meat eater but my family is. I was wondering how to can pork for them and then you had this today so I was so happy to see it. I would like to know if you but liquid over the pork before you canned it or was it just the natural juices. It really looked good. I know that I will be coming back for your recipe.

I rushed over that and I am sorry... Yes... Just boiling water to a 1" headspace... The pork is still mostly raw after a short par boil so it still adds flavor, and then the light seasonings... I did NOT add water to the scraps jars....

I was the same way for many years... It was Mark who bit the bullet (many years back) and just threw it up on the stove and went for it... LOL He likes to can, but he really just wanted me to be able to do it because I always wanted to....

Lisa Kindhart I was about 6-7 years old when my grandma blew up the pressure cooker.. I’m now 77 and I’m still traumatized! I won’t use a pressure canner to this day..

@@jerriewyatt905 I don't recall ever seeing it happen but I've been told that it has which scared me so bad that I have never tried to use one . I'd love to learn so I don't blow one up or hurt myself trying . Probably the best way to do it would be over a propane burner outside that way if it blows I won't blow up my kitchen lol.

Yes, made me nervous watching you cut on a moving surface. Use an extra dish rag/paper towel anything slightly damp to give traction. It will help Tremendously ! Love your videos !

I rare work like that on the stove unless I am videoing... I have a really nice stainless prep table that Mark custom cut the legs on for me (4' 10") to my height. That height even takes into account the large beautiful 2" thick cutting board he got me (and it never moves since it weighs about 20 lbs)... The towel is a great idea and I will try that, but please know that cutting on the stovetop with a cheapo board is not the norm for me at all...

Tina, how do you find your chicken, beef, and pork at a reasonable price to purchase like that, especially now? Where is the best places to look for any meat deals? Would it be in sales papers or certain days? Around here in SC they are $16.49 lb for meat that cost $2.99 lb before covid 19. They say they can't get the help so they are just butchering and getting rid of them. They don't have the help do theycan process, package, etc..the meat. So they are just wasting and prices are already sky rocketing. Any tips you can give on locating reasonable meat would greatly be appreciated.

We really watch for sales, and then I will freeze meat until I have time to can it... But the trick (I guess) is to strike when the iron is hot, and buy when you find a super deal...

Hello. Thanks for your video. How long did you boil the pork in the water before canning? Did you have the 3 quarts (at least that's what my canner calls for) of water hot before you put the jars in to process? I'm going to go look at your Carolina BBQ sauce now. We have a place here in MO that has some that is yummy. Was hoping to figure out how to duplicate it. ;) Also, how many pounds of pork loin did you start with? Thanks again

There were three pretty good length loins (not sure on pounds, but reg length loins)... I par boiled them just long enough to remove the outter fat that clouds up the jars, about 3 min... And we always try to match the canner temp water to what we are putting in to avoid blowing out the bottoms of the jars from a temp difference... // Hope you enjoy the BBQ sauce recipe, it is modeled after an award winning (multiple years at the state fair) restaurant recipe we lived near in NC...

I like that method. It'll be easier to see if something isn't right. Parboiling seems to ensure the meat isn't pink.

What did you do with the boiling broth? Personally I would have super strained it and used it as a base for the filling liquid and I always put some liquid in my jars when i fill first to help displace bubbles. I have canned up some tomatoes so i'm stocked there for now. Tina does the canned pork stand up to a sweet and sour recipe? I need to can some more meat like you and i bet its really tasty good in pies and stews xx thanks for sharing.

It is really hard to get the snow out of the par boil water (takes a few times through the cheese cloth)... But please keep in mind that the pork is still raw after such a short par boil, despite how it looks... And it still brings in great flavor... And yes, oriental dishes (and Hawaiian) are my favorite uses for the pork, so it does hold up quite fine... Common to canning pork is it coming out rubbery rather than mushy... The salt in the par boil pulls out the blood, and that is my real secret to having it come out that way you would want it rather than either of the above...

I'm new to pressure canning and have only used my new canner once. Which pressure canner do you use? Because I'm still a rookie, wish you had been able to show the canning process. Thank you for your video. Side note: my dad was retired Navy, brother Air Force, son and grandson Marine Corps.

We appreciate your family's service ! Both of our father's served, as does our son currently... I am not sure if it is a Presto or a Mirro... It is just a cheap one, but they work just as well... We have several other canning videos and show the process in 95% of them... I was just sort of in a hurry, and doing other things between steps... Sry

Hey Tina, do you have specific recipes for the canned meats? We just freeze and take out for each recipe. Some can all there venison because they don't like there's Frozen. I guess it's a matter of taste and what your used to. Nice work though nice to have it all done up. JO JO IN VT 💕😄🇺🇸

Hi Tina, I have never seen anyone can meat before. Why can and not freeze the meat? Do you buy in bulk and this is the best way to preserve it? And how about the taste? We use the freezer as a canning tool, so we can purchase meat on special even if we do not intend to can it right away, or we cannot buy enough for a large batch at once. Please note the first loin I was sawing (not cutting) because it was still mostly frozen. We have two upright freezers and the one with our fridge, and we need every bit of it, so what I can saves space there also. We enjoy canned meat, and the taste is wonderful. I disagree the taste is in the fat, a bucket of lard is hardly inviting. That aside, the meat is still raw inside after such a short par boil, and imparts a great flavor into the broth (water) inside the can. As for it drying out in cooking, you really don't cook it (persay) so much as you add it to what you are cooking. And in the case of bbq pulled pork, or oriental dishes, or Hawaiian dishes (our most common uses) you are cooking it in a sauce.

i havent had good luck with pork loins they are always so dry and i have tried a few different recipes so i will stick with pork chops with bone in so they cook moist hugsssssss
