We use this sauce as, Pasta Sauce, Pizza Sauce, Tomato Sauce
Recipe:
2.5 gallons tomato juice
4 green peppers
4-5 large onions (or the equivalent)
4-6 cloves garlic
I run the raw, cored tomatoes and onions, peppers and garlic through my Vitamix.
Alternately you can cook the tomatoes, onions, peppers, garlic and then run them through a food mill like the Victorio strainer or something similar.
Pour your liquid into a large, Heavy bottom stock pot and add:
1 pint olive oil
1.5 TBS Basil
1/2 - 1 cup sugar
1 TBS crushed red pepper
4 Bay leaves
1.5 TBS oregano
3/4 TB Italian seasoning
1.75 TB parsley flakes
1/2 cup salt
2-4 cups tomato paste
Simmer all together until it has reduced and is thick to your liking! Adjust spices to your preference. I simmer for 3-4 hours.
Ladle into clean jars. Add lids and rings, hot water bath for 10 minutes.
We use this sauce as Spaghetti sauce, add a bit of sugar when we serve it as marinara, we also use it as Pizza sauce and in all other Italian dishes.

I have watched this video numerous times in the past 10 months in preparation to make my own pasta sauce. I finally jumped in and tried it yesterday and it was a huge success! We tried some for lunch today after church and everyone loved it! I am so appreciative of you taking the time to share your gifts and talents with me. It has helped me feel more confident as I was never raised around garden, canning, homesteading etc. I'm sure canning pasta sauce seems like nothing to you at this point in your life, but it was such a huge success for me and another step in being able to feed my family from our backyard! I told my husband I used "Ruth Zimm's" (that our short name for you 😅) recipe, and he said, well of course it's going to be good then! 😂

It's good to do the canning outside my father had a little farm and had always a big garden and chickens, rabbits an turkeys when autumn was there it was time for my vacation and I pass my time whit my husband there doing ketchup, tomato sauce, carrots ,greens and yellow beans ect....,prepared the chicken and loved doing that every years. When my father past away everything stop my mom sold the house and came living whit us ! Wonderfuls memories came back watching yours videos and it's made me really happy ! Sorry for my eglish i'am a french Canadian from Quebec !❤

We always make sauce together as a family, we cook our tomatoes down then run through our veg and fruit strainer kitchen aid attachment to remove seeds and skin. Then we add all the ingredients which are pretty simple. Garlic, olive oil, oregano, parsley, salt, and fresh basil leaves go into jars, then we add the boiling sauce, add our lids and rings and wait for everything to seal. I used to make a year’s worth of sauce using my hand mill, boy that was a long day, but my attachment cut the time in half. Now with my own garden we make it as the tomato’s come ready. It’s so satisfying to make my own food that is healthy.

I've used heirloom tomatoes, some pretty sweet and not very acidic, and instead of adding any citric acid, lemon juice or vinegar, I just pressure canned it according to the time my pressure canner instuctions stated. Never have added sugar when i've done that, most heirlooms are sweet enough.

That pasta sauce looks so amazing. My grandma canned her sauce as well. I watched her sometimes but she never explained how she did everything though Brings such joy to my heart to see your children working together and learning important skills. And I learn something every time I watch your videos

I remember helping my Mother can as a child and I HATED it lol ! But she would be proud of how I can today. Never did for years but now I do and its amazing how much I remembered from those early years ! So give your kids helper chores. They are paying more attention than you realize !

I used to make a sauce like that only I didn't simmer it down to make it thick because I would freeze it freezer bags laid flat to keep space more organized. Then I would use the sauce as the base for plain veggie cabbage soup,, veggi beef soup, chili, lentil soup and sometimes I would put it into rice. I also would put carrots in as well. Loved watching how you do it.

I do this exact thing with my Vitamix! My Hubs has Diverticulitis, and cannot have seeds (at least not a lot) and this really makes things fast and easy. It's also nice because my family likes a nice, smooth sauce. I chuck tomatoes, peppers, onions, garlic, and sometimes a little zuchinni right into the blender, whiz it all up, and cook it--just like you do!

I've never made tomato sauce but after watching your video I'm definitely going to make this, I have a Vitamix so sounds so much simpler. We also built and outside kitchen this year, LOVE prepping, canning and getting things freezer ready or fermenting out there. Thank You for all the info!

Love your process! You may want to checknout a video where the Italian Grandma makes tomato sauce. She uses a modified open kettle method you might find interesting.

👉Here's a tip for helping with heartburn ❤‍🔥 from tomato sauce products. When you're making a meal, add about a 1/4 to 1/2 teaspoon (more or less as needed) BAKING SODA per pint and mix until the foaming subsides. This raises the pH (more basic) a bit and makes it less bitter, thus tasting more sweet without adding any sugar. DON'T add the baking SODA to the jars before canning - only afterwards when making the meal. Thus, this simple trick solves three issues with tomato products: * it raises the pH to help with heartburn * it removes bitterness * it adds sweetness without adding sugar BTW - I love watching your videos, showing practical time-honored methods with your healthy family. Blessings to you all❣

Made the sauce today. Such a great use of the VitaMix blender. Not a fan of granulated sugar at my house. (I know....I own a bakery....What the heck?...decades of that is probably why) So I used a bit of molasses and AC vinegar to round out the flavors....I often have used that duo in tomato based soups in my shop. Loving the wisdom from you. Going to try some of the sauce in my freeze dryer....we will see how it goes ;)

I use low acid or heirloom tomatoes to keep us from heartburn. I also add a stick of butter per batch to cut the acidity too. I've been debating about trying to make it without using any paste. I'm thinking of cooking it in a electric roaster overnight and seeing if it's nice an thick by morning.🤷‍♀️

Baking soda while cooking neutralizes acid too. The sauce will foam up much like vinegar and baking soda.

If you put a thin layer of dawn dish soap on the bottom of your pots...they wash up easily..no scrubbing

When you add your second batch of jars after taking out the first ones, do you need to let the water cool at all or how do you know if the jars that had been sitting in the counter are the sameish temp as the water…just what the jars feel like on the outside to what the water feels like to your hand?

I sometimes remove some hot water and add a bit more cold water to bring the water temp down if I feel the temperature difference is too great.

Thank you for your video! Do you not need to completely cover the jars with water for this? It looks like you have the water near the top, but not at least 1 inch over the jars. Everything online tells me to cover jars completely. So many rules these days 😆I would like to know your rule of thumb for this! Thank you!

Amish and Mennonites traditionally add the water to the level of the food in the jars. The USDA guidelines say to cover the jars with 1” of water. It depends on what you’re comfortable with for your family. Your kitchen, your rules.

Because that’s how I was taught to do it by my mom and grandma… I guess it’s the ‘old fashioned’ way before the government regulated preserving food.

Thank you for subscribing!!!!! When i pressure can I try to only use Ball/Mason or other jars labeled for canning. But for water bathing I use all the old glass Jars I have!!!

I’m wondering do you use your dry canister to grind grain ( I do ) my other question is , the flour is pretty hot when I grind for 1 or less . Is this burning my nutrition out ? Make sense ?

They,say some nutrients are compromised when grain is heated during grinding. Not sure how much. My grain mill does create some heat, but I feel it’s still better fresh ground than what you can buy at the store.

I can't use tomato paste because it just makes it way to acidic for our liking. I have been running my tomatoes through my champion Juicer. It removes all the skins and seeds which can cause heart burn in a lot of people that I have talked to. Once I have my tomato juice, I boil it for about 30 mins and then turn the heat off to cool. This separates the water from the sauce. Strain through a fine metal sieve. The tomato water goes to the container and the thick tomato sauce is in the strainer. I dump what is in the strainer into a pot, Once all the tomato juice is strained you can then add your spices, onions, garlic and what not. Add in some tomato water to make it the consistency you want. Bring to a boil and can away. I also can the tomato water to use for making rice, adding to soups, chili or cooking noodles.

It’s personal preference. I like the heirloom varieties because they are less watery than the newer ‘shipping’ varieties

From my Mom: You should have your daughter and son use the tip of a potato peeler to get the bottom of the tomato off, not a knife. Too easy to cut yourself.
