You can buy ph paper with a narrow scale from 3 to 5.5. Anything below 4.5 is safe, but I go for under 4 to be sure. But please note: it's not just the variety, it's the soil and climate that determine ph, so test each batch before canning.

Was always told when canning tomatoes you had to add acidity to keep them from spoiling, didn't see you do that so I guess you have success without it.... love your method I've been freezing tomatoes for years because the water bath method of canning took much to long

Hi. This is the open kettle method that has been used for generations until someone deemed it outdated. I learned this as a kid from my grandparents. It still works great for jams, jellies, and tomatoes. I just adapted to using the oven to heat my jars and that works great. Some folks add a tsp of lemon juice to a quart but I don't see the need when using the better boy or celebrity varieties of tomatoes. Best of luck canning.

Acidity is not for spoilage, it's for botulism. If your tomatoes are below 4.5 botulism won't grow. Adding acidity lowers the ph.

Do you wait for the stuff to cool down before measuring the ph? How much does that tester cost and do you have to calibrate it with solutions every time you need to use it? Sorry for all the q's

Harmon Heat. Hi. I checked them before I cooked them for canning. I got it if of Amazon. Yes, you have to calibrate it with water that they provide. It will help you answer the question about the acidity of your food.

I am a new sube to your channel and I love it. I did some tomatoes and I had no problems doing it your way. can I put anything else in the tomatoes like to make a soup and canned it the same way.

girCecelia McDonnell Hi. Honestly I'm very cautious about canning soups because of all the variety of ingredients. Anything with beans, peas, or potatoes would need to be pressure canned. A terrible botulism poisoning event happened due to canned potatoes a few years back. It's so quick to make soup after you open the tomatoes that I just wait and make soups on the spot.

Guys I can’t find the answer anywhere. I’m trying to make a super acidic meal. Does adding water as in stews or soups decrease the acidity(increase the ph) and so water should be avoided? Thanks

Well i made a batch and it canned up good so far. But when i went on another site the girl said,"oh you have to water bath the onion soup because of the onions" So i wasnt sure what she meant.

@@useful.knowledge a batch of onions w/a little butter I cooked them down to half, then I added beef stock some water, 2 bay leafs, fresh chopped garlic,parsley,beef paste, pepper. I let it all cook approx 2 -3 hrs. Got my jars hot and filled em and flipped em for 5 minutes

I measured before. It most likely increased in acidity after I heated to boiling because some water did steam off

I use garden fertilizer so I’m not organic. However, I never use chemical poison or weed killer in my garden.
