I hope you enjoy the first video with the corn and black bean salsa recipe. It really really did turned out amazing.
Here is the video giving you instructions on how to canned salsa and corn. Sorry I was out of sorts. I have been dealing all week with my back and it really was a struggle just trying to get healthy again, knowing that I had so many things I had to do. I think it’s just because I’ve been traveling so much with airplanes and driving hours and hours at it really took a toll on my back. But I did find that standing and walking around felt way better than just sitting, it just hurts so much and when I stood up, I could barely stand. It was crazy.
So if I seemed a little off, I apologize, I I knew that I had to get this canned because there’s lots more to come
So when you can, vegetables and fruits, if they are an acid, you normally can just put them in a water bath, and the acid will help preserve that fruit or vegetable, but if you have a base like corn, green beans, and potatoes you do need to pressure can it to remove any bacteria that can build up in the jars overtime and to seal them so they do stay longer. Usually if you have a vinegar or like a lemon juice, added to your jars, it will help it be acidic, most of your fruits because you add pectin to them you can do a water bath and your relish is because you’re adding peppers, tomatoes, and a vinegar that will help preserve it. But I like to just be on the safe side and pressure can because it doesn’t take up too much work and then you don’t have to fill a pressure canner up to the top like you do a water bath. I have issues with my back to. I just recently got dizzy and fell in my bathroom face down on my left arm. It’s not broken but has surely been sore and hard to do anything because of the pain. I payed on the floor for 1 1/2 hours because I was in so much pain. Luckily my husband is home on vacation, so he gets to take care of me! I can’t wait to use my arm again. I got to get healthy too, but I love the food this time of year. It’s easy to pack it on but not easy to take it off.

I love watching you. Your down to earth and a happy person. I would love to meet you and maybe watch you in person while your canning. I tried my hand at canning chili and after about 3 months they started un-sealing and I lost a good bit of chili. I don’t know what I did wrong.

Im mid 50s and remmeber my granny hearing is slam the screen door, “don’t run through the house! The pressure cooker will blow up” ssscccrreeaach! Lol She used a pressure cooker to can, but she also used it like folks use instapot snow days. A roast, etc. oh my goodness. I can hear and see thst niggling on the top and letting out steam. Good memories.

I would add in also to start lifting weights. Doesn’t have to be anything super heavy, but when I started I noticed how much better my body was feeling and I didn’t get injured anymore like I used to. Also a bonus since you start losing muscle mass after 30 years old so it’ll be good for the long run.

Heather, I believe that I saw another u-tuber use a rack in her pressure canner. So I believe it was.for 2 layers of small jars

This is correct. My Mom had this rack and used it multiple times. Two layers of pint size jars.

I use the rack from my tamale pot to stack pint jars in my pressure cooker. Works great.

Wonder if making a liquid with the corn cobbs wouldn't be more flavorful? Then the liquid could be used right in soups, etc. Then allowing for the salt you added in canning with the recipe. Miss canning, learned at my Moms knee, making family dinner by 8 1/2 yrs old. Will you pass this knowledge down to your kids and have them help more with the canning process for learning so their generation can pass the knowledge on?

@Mama Bell, Heather, is it Silver Queen corn? That's what many farmers/gardeners down here in South Carolina plant in their gardens, and it is ooohhh soooo good!! It's tender and sweet and easily comes off of the cob and is just as good on the cob!!! I love your canning tutorials! And your cooking 101 vlogs as well!! Cannot wait for your cookbook to come out!! I have a request,... could you please include the/a recipe for Pasties??? I think more people should try them, because those who haven't are reaalllyyy missing out!!! 😊 I appreciate you so much!! Do you can okra? If so how do you do that? I grew okra in my garden and I have no idea the best way to can it. My mom always froze it as is but there has to be a better way to preserve it.

You really should fill your jars to one inch head space. It's that way for a reason. The more air the better chance for bacteria. I am sorry but 15 minutes in a pressure canner is not long enough time.
