Finally, it’s the time to start harvesting my garden and canning vegetables, drying herbs, and getting ready for the winter season.
I think my favorite thing is canning green beans. We just have a tradition where we snap beans together while watching a Christmas show and then I get them all processed. I love seeing the outcome of how beautiful you look in the jars and just knowing that I have vegetables to provide for my family throughout the winter.
If you have any questions on how to canned vegetables, please feel free to comment below. Hopefully this video helped you to understand more about the canning process and I really wanted to make sure to give you different tips things that I found to make it easier.
Happy garden, Harvesting

I remember coming home from school & my parents in the basement (had a old stove hooked up) had to change clothes & help, tomatoes, cucumbers for pickles (dill & bread & butter), chow chow, corn, string beans, tomato juice & my Dad cutting cabbage for sourkrout in a crockery, it was tiring but so worth it, even hearing the popping of the lids (Bell & Kerr) for the lids, thanks for the pleadant memory. Be safe & Blessed 🙏

Oooohhhh I'm so excited!!! And I just can't hide it!! I'm about to lose,.... oops! Sorry! 😂 I looveee this vlog! I love canning, and freezing fresh food from the garden! I grew up on my grandparents farm, and during the planting and harvesting time, it was hard work, but it was so worth it! I have hoed many a row, picked beans, peas, tomatoes, cucumbers, squash, okra, corn, alllll kinds of veggies, and also worked the watermelon fields, the hay fields, the potato patches,... the feeling you get when you do all the hard work and can and/or freeze all that food,... the awesome feeling of seeing the fruits of your labor is just .... AMAZING!! I am sooo looking forward to more vlogs like this!! Thank you sooo much Heather!! I sure do appreciate you!!! Big ol hugs and love from MamaJane in South Carolina PS, sorry if I got that song stuck in your head now!!! 😂 I'm so excited, and I just can't hide it,..... ❤❤

My son had his first garden & he wanted to can Salsa & spaghetti sauce. so he asked if I could help him. I’ve never done any canning so I suggested he call my sister Di. He did & she had him over to teach him the whole process. That was at least 10 years ago & he has since then canned every year. So if you’ve never canned ask a friend or family member to help you out the first time. My sister was really honored that he asked her. He also shared some his finished product as a thank you. Good luck future canners of America!

Try "dry canning" your potatoes ( absolutely a game changer ) Pack potatoes in jar, as much as you can stuff in there, leave 1/2 inch head space, do not add water, wipe rims, Pressure can pints 35 minutes, quarts 40 minutes. The potatoes tastes like you roasted them in the oven .I can potatoes, green beans carrots this way. They are shelf stable and delicious!

Th term for beans that can be saved for planting next year is ‘heirloom’. You are correct, they are a pure variety and have not been cross-bred. Let the beans dry on the vine then harvest and shell them, store the beans in a cool dry place until ready to plant. And, I also had poor results buying off brand lids during Covid because that was all that was available. Total waste of money!
