I usually buy 2-4 rotisserie chickens, strip the meat off and refrigerate, make stock from the carcasses, then can the chicken with that stock. Those carcasses make a really flavorful concentrated stock which then makes a rich gravy.

Rather than pressure can raw chicken, I place free range chickens in a turkey bag and bake on 200° for several hours. Baking and then canning the chicken in this way is comparable to pressure canning rotisserie chickens. They both turn out quite moist instead of dry. For the fire cider, if you've filled that jar all the way up, you can strain off the liquid after a few weeks and add more ACV and let it go for a second steep. I've done it multiple times. That way nothing is wasted. 🤗. I have a press I use after the second steep to really get everything out. And then I give the bits to either my chickens or pigs but some freeze dry it and use it for seasoning.

Today, after getting over a mild case of Covid, sinus and ear infection, I canned 12 jars of your Brunswick stew that survived divorce 😂. I was so glad to have chicken soup canned up when my husband brought me home Covid, from a corvette show he went to. It felt like I had strep throat! The broth of the soup, that I added extra salt and pepper to, when I put it in the crockpot to simmer all day, soothed my throat and the pepper helped with inflammation! I like to add some dried Amish noodles, or the frozen Amish noodles, to my soup, and an hour before I want to eat it. My husband isn’t a fan of chicken soup, and I don’t usually eat it, unless I’m sick, but he also enjoyed having the soup hot; and after the first day, he could warm it up in the microwave whenever he wanted it! I recently went to our Costco for the first time! I couldn’t resist purchasing some stew meat, even though we have a whole cow and a deer in the freezer! I wanted to try canning stroganoff for a quick meal prep. The stew meat was $29, and I was able to can 4 quarts of stroganoff, along with keeping some out to cook with some onions, for my husband, he got 2 meals from that. So, if you add it up, we got 4 meals for 2, totaling 8, plus 2 meals he ate. That means each home cooked meal costs $3!!! (That’s not counting the egg noodles and sour cream I will add when I make the stroganoff!) That is encouraging me to use the meat in my freezer, to can even more ready to heat meals!

Typically have used it any many dishes, but never have I made chicken soup to can with said chicken. Brilliant!! I work long hours, but always stop to make chicken noodle soup for anyone that is starting to feel ill. I will definitely be canning some shelf stable chicken soup tomorrow! It will make my life so much easier to simply cook noodles and add to it, while caring for folks that I love. And, by coincidence only, I randomly purchased two rotisserie whole chickens today from Sam's Club!! No Costco's in Central or Northern Maine, I believe there may be one in Southern Maine. I know I've stated it before, but I will again..... I so appreciate all the work you put in to making these videos! Me, too. I can half pints and throw them in my purse for work lunches for myself and my kids. I'll call ahead and grab a pile of chickens, go home and pick the meat off the bones, instant pot everything I don't want to eat for broth. Cover the canned meat in its own broth and can up any extra broth. My dog gets all that is left. No waste!

Hey, Kari! Fire cider is an "immune boosting tonic" this is generally taken in 1-2oz shots during cold and flu season. I don't have any experience with using it yet, but we'll see. David catches everything, so I'm mostly focused on trying to keep him well.

Hi Carter I finally used the sous vide on a turkey breast. Omg that was the best turkey I've ever eaten. Next will be a roast. I'd bet that if you did that with chicken and then canned it it would be delicious. This week I canned blueberries, strawberries that I crushed, and freeze dried pineapple, ham dices, mashed & diced potatoes, and turkey pattys! Hey, Kim! I generally dump and replace at least some of the water so I don't shock the jars too much. If I'm hot packing, I may only pour off a bit and replace with cold, but if I'm cold-packing, I pour off all the hot water and start again with cold water.

Hi Carter so nice to see you. How was your son's wedding? Beautiful I am sure. Rotisserie chicken is so lovely and tender due to the chicken constantly basting itself. I bought myself a rotisserie oven and love doing pork roasts on it as well. When I cook chicken or turkey in the oven I use the "bag" not sure if you have it in the states. I am in B C Canada. They are clear bags come in various sizes. Your chicken bastes itself in the bag and browns beautifully. Soup for me is all year round. I do mostly Zuppa Toscana and very spicy for us as we love that. Add cream or yoghurt after. Love your videos Carter. Take care Cheers

Hmmm. Not for me it doesn't; however, I will say that I use coconut milk for almost all of my dairy needs and have for years, so I may not be your most unbiased source! Feel free to use heavy cream or a good thick yogurt instead of the coconut milk, if you'd like.

Hello Carter , great video . To be honest I have chicken soup every fortnight after roasting chicken . The scent of the broth just makes me happy . The colour when made using onions , [ washed of course ] with the skin's on is uplifting , even without a cold . You can probably guess what we will be having on Monday for supper .🥰😋😋😋😋😋😋😋😋😋😋😋😋I prefer to use a tea spoon when peeling ginger .

I'm not familiar with palak paneer, but I agree with you about spinach. Perhaps a bit floating in some soup would be ok, but I generally find that spinach gets pretty slimy when canned. You would also lose the beautiful green color. I think you'll be much happier continuing to freeze it.

Just a question. You discuss how the canning of raw chicken makes it dry. I have found this to be true with breast meat, but not as much with thigh meat. In canning beef stew with Cosco "stew meat", I found that the beef is also dry. It seems like the long caning times drives everything out of the meat. Is there a cut or a method that would solve this?

Hey, Emile. I find that chuck roast stays much more tender than stew beef. However, it's a trade off with time and effort involved. They're generally pretty close in price at my Costco.

@@melodyhelmbrecht1211 The recipe was for beef stew, so it contained broth. I think Carter's reply is the way to go. I will take the effort to cut up chuck. One thing though is that I was heating the stew in the microwave ( I use 1/2 power for 7 minutes). I just tried heating it in a saucepan by making a gravy with the broth from the jar and then adding the beef and veggies from the jar. It was much better.

If it is extra “saucy”, serving it with warm naan bread to dip into the sauce, would be delicious! (I wonder if you can buy or make, naan bread, for the keto diet??). Maybe using sweet potatoes, or other vegetables, that are freeze dried and blended into a flour?? That meal screams, to me, for some kind of warm dipping bread.

It is 2 of the vacuum sealed bags pre-pulled rotisserie chicken. Each bag weighed 2lbs, 14oz.

My new favorite way to can chicken is to boil my chicken breasts and shred them. It stays juicy like rotisserie chicken! We love it!!

Interesting! I wouldn't expect that. Do you use boneless chicken breasts? Do you can them in chicken broth?

@ I do use boneless skinless. I do can them in some broth but I’ve also canned them in water.

Is this store bought rotisserie chicken or home made? I see lots of people use store bought but if you read the label or have watched videos on what they inject in them, it made me stop buying them years ago.

It is from Costco. As I mentioned in the video, I am not fond of the ingredients, but something they use makes it can up exceptionally well. Homemade baked or rotisserie chicken is an excellent option.

@@growandpreserve I believe the rotisserie chicken sold has been brined. I do that a lot with chicken and turkey, whole or parts, for overnight or up to 24 hours. It makes an incredible difference in the final product.

Try turkey this month it's on sale at aldi's for $1.07 lb. I got 6 pints if Turkey in broth and 5quarts if bone broth canned and still had the breast out for salads and Manhattans. But I will buy one more for making turkey sandwich spread. Because its just me and my son so I will can in 1/2-1/4 pints . And will do ham spread when it goes on sale too. Like in youth days mother aunt would can together each year ,extra large coolers full of the last veggies of the gardens they always planted, because you see they were they were 2 of 9 sisters and one brother lefted of 17 children so they always canned all they could for the year too come for all their families meals. And my dad and uncle Roy would hunt what ever was in season for multiple families meals Dom off the farm place . Me and my cousin was just calling about those days. And we wouldn't change them for nothing. Back then their wasn't any fighting st all just happiness.

Great idea. But, noticed you didn’t rinse the tikka masala jar with broth and put in the jars. And the chicken broth had obviously separated and never once shook it or stirred it to combine juice and fat. I bet that broth in the jars of chicken was bland since it wasn’t mixed. Just surprised at a couple things I wouldn’t have done. But, your kitchen, your rules.
