I don't have a air fryer so I will use my oven at 400. Thanks also for reminding me to defrost my 12 lb turkey. Indeed to put it in jars and make some room in my freezer. What a timely video! Many thanks!

I did my last turkey based on a video by KZbin channel That Dude Can Cook. You chop off the legs & wings & breasts, put meat thermometers in a leg and a breast, and the carcass into a stock pot for broth right away. Pull the breasts & wings first at 162 degrees and let them rest. Keep legs in longer so they will be more fully cooked and tender. It was all so wonderful. I’m never cooking turkey any other way. It was so much faster in pieces and I was able to remove the breast early and keep it juicy! I will have to try canning some of it next time!

I used his method this thanksgiving and agreed. Everything turned out perfect. This will be how I do my turkey from now on. 😊 I also made his gravy and herbed salt… divine. So delicious

It is over 100* heat 8ndex in Florida so I cooked a 22lb turkey outside by the pool in a roaster last week. Didnt can any, just froze leftovers

The turkeys turned out beautifully, both before and after canning! And the broth ... I could almost smell it! Turkey Divan would be a great way to use some of the turkey.

Such a great idea to get meat on the shelves before the summer avalanche of tomatoes starts creeping in. I’m opening up a can of BBQ pork and a can of wedge potatoes for dinner tonight and it couldn’t be any easier since the bulk of the work and cooking has already been done. I love a heat and serve dinner on the weekends. Those Hero buns are a fantastic treat for the whole house, too. Thanks for the rec on that brand!

That's one of our current favorite go-to dinners, Kari. Yum! We had tacos tonight, so perhaps it'll be bbq sandwiches and fries tomorrow. I agree about the hero buns. Hi Carter !! Your Turkeys baked up beautiful, I could have took every bit of that golden skin off and ate it ! No wonder the cats little head was sticking up there .. I would have been too ! Lol. So nice to see you Carter. I just wanted to mention something. I don't know if you have tried it. I have for years and swear by it and that is a turkey cooked in a bag. I also do my chickens and ham as well if cooking in the the oven. Here in B C it is a brand called " LOOK" it is a large very crinkly noisy bag and you start by tossing 1 tbsp of flour in it just to coat it. Apparently if you don't do this it will explode... so very important step. I put turkey and vegies/garlic/onion/herbs and white wine all in and it comes with a plastic tie and put in a roasting pan. The turkey browns just like it would without the bag BUT I tell you it is melt in your mouth guaranteed. I have to mention to you as well I did that mango chutney and I did tell you a while back it was very strong in vinegar... and this did not mellow out. No one liked it at all. So I disposed of it. It was heart breaking but it was no good wasting my jars on something no one would eat. So lesson learned here for new canners out there not to make the mistake of "thinking" it will be awesome and do a large batch but do a test run. This was the first time Carter that I have done that mistake in all my years of canning. I have to look into a dehydrator and try some of these recipes you do. I have animals to that would love the treats. Thank you Carter for a great video. See you soon. Cheers

Hey, Sheila! I have not heard of the potentially exploding bag! I think we have some sort of oven baking bag here as well, but I haven't tried it. So glad it works so well for you. So sorry you didn't like the mango chutney. At least you know now.

The bag that I used (Reynolds?) said to cut a slit at the top, too, to allow steam to escape.

Hi Carter, I cooked 2 hams and 2 turkey a couple of weeks ago. I canned all the dark meat, the white was divided between the freeze dryer and the freezer for sandwiches later. Took all the drippings for gravy(freezer) and freeze dried the broth The ham was sliced and freeze dried, the bones will go into beans, and the broth went into jars for gravy later Canned 24 pints h burger on Fri! Only thing left are steaks I still haven't tackled the sous vide and I hate to ruin grass fed steak by freeze drying it incorrectly. Just returned from a short trip to Arkansas and threw in 2 trays of veg soup and 2 trays of chili into the freeze dryer I could really smell that turkey, how was the bb vs store bought. I felt like mine was a bit tough (Publix back in Nov). Can't wait to see what you do next! Two weeks left until I head to the west coast. Poor Esme will be running daily until then. Connie. Always busy! I'm looking forward to fding some ham when fresh hams are out at Christmas. Didn't think about it at Easter. I agree about risking GF steak in the FD. I may try it with a Costco steak first. Will keep you posted there. I thought the fd broth granules turned out great. I haven't reconstituted any yet, but I did taste test as a "flavor enhancer" and thought it was great. You're going to have such fun on your trip! And poor Esme will get a much deserved rest.

@@growandpreserve we are low sodium and I can control the salt so much better my own with canned meat then add to it as I use it... I'm new to canning meat but have done beef cubes, pork, chicken breast and turkeys with both white and dark some in broth some in water. Game changer for a hurried meal!! I want to do ground beef so I'll be looking for it in your library.

@@monahardy978 You've been busy! I love canned ground beef. Talk about a game changer...no splatter, no draining, no constant monitoring while browning. Just open a jar, season and heat. Gotta love that! Do note that I can my ground beef without adding liquid (other than some fat) to the jar. The USDA method adds broth or water, which I think makes it super soggy. Carter the turkeys looks so delicious. Love holiday smells of turkey and hams baking. Jars will be perfect for a nice meal. I'm all about the gravy also. Nice to have canned broth on the shelf. Soup in 20 minutes. Freeze dried cat treats that's $20 a jar saved. Have a good week.

Yes! Especially for short me! The side opening door was a huge selling point for me. With the pull down door, I would never have gotten the turkey in the top oven.

We use Trader Joe’s Everything but the Leftovers seasonings. It smells exactly like Thanksgiving. It’s only available around November so I stock up every year. Great on poultry, but we use it on pork or beef as well. It’s also wonderful to add to plain gravy to make it more holiday-ish.

And the entry is so cool instead of pulling down. May I ask what brand is it. Having a disability it would work well for me in my new kitchen. I love turkey it’s my favorite meat l always buy 2 or 3 turkeys at thanksgiving time but never considered them in off months. Great idea I love having turkey and broth in a jar but sadly we burned through all that I canned last November. I will have to look for sales.

I roast the turkeys take off the meat and save the drippings refrigerate while the skin, bones and organs cook over night for the stock. Jar up all the meat then put in a Equal amount of the drippings In each jar then fill it up with the stock. It adds so mutch flavor adding the drippings. My family do not really like turkey but I get 6 every year just to can turkey gravy.

Hey, Cynthia! I put in 12 cups of broth in that first batch and ended up with about 3.5 cups of granules. I'm thinking roughly a 3:1 ratio water to granules, but there could be some fudge factor either way.

Sure! Super simple. I used all the drippings from the pans, added broth and reduced by about a third. Add seasonings and stir in thickener of your choice. I am keto, so I use glucomannan, but feel free to use a flour, arrowroot or corn starch slurry if you prefer. Do everything to your taste. I don't measure much of anything when I'm just cooking for us. Just keep tasting...that's half the fun anyway!

Hey, Madeline! I pour off any liquid that has accumulated in the jar, then toss the fries in the air fryer or onto a sheet pan. Spritz with oil, add salt if desired. Into the oven or air fryer at 400-425F for about 10 minutes. We just finished our last jar of them 2 nights ago. Ack!

Carter another great video! ❤ I wanted to let you know I am going to have to return my Presto electric canner😢. You know I told you that it would work properly until it got to the (canning) portion. It never gave an error code and would just vent until all the water was gone if I didn’t stop it??? I am worried that the food I did get processed is not safe?? I had to restart it when processing to get the vent pin to pop up when it worked correctly. I am sacred it’s not safe and disappointed. What to do? I don’t know if I will get another electric canner or not.

I was laughing... If it doesn't have enough fast in it to worry about, why run it through the fat separator? I have a fine mesh sieve I put in to of my OXO and go straight into a half gallon mason jar.... Easier storage. But I realize that may be a height thing I had never considered before.

I have heard that it can turn a bit metallic tasting, Tammy. I haven't experienced that, but I don't usually intentionally use it in canning recipes. It does end up in turkey products, often in leftover spaghetti sauce, etc. But, if I'm creating a recipe specifically for canning, I usually leave it out in case it bothers someone else. Can anyone tell me after cooking the turkey and or chicken then putting in jars and recooking in canner for another 1-2 hrs how the meat texture comes out. To me it seems to be it would be over cooked and be a jar of mush verses canning from raw state and cooked once as i do with all my canning except for things like sauces, salsa or jams

Hey, Spark. Hopefully others will chime in, but I'll give you my experience. For me, raw pack poultry comes out as "shredded". Perfect for things like chicken salad, bbq chicken sandwiches, burritos, buffalo chicken nachos, etc. Pre-cooked or rotisserie poultry, if more pulled than chopped, still comes out with a more "pulled" look and texture, which I like for a turkey dinner, pot pie or some type of casserole.

@growandpreserve Thank you, I have (2)15-lb turkeys in my freezer and about 6 or 7 whole chickens that need to be dealt with right away. I'm thinking of saving time or steps to thaw, debone all meat, then raw pack and can accordingly. The only 1 cooking step I wanted to do is the bones for broth, then can accordingly

You can cann gravy just pressure can for 90 mins or water bath cann for 3 hrs.
