Cannon & claw (just the right amount of everything)

What do you do if you can't force cannon early? Still go for it later, or usually switch up? Start doing the same thing with treb?

Great question. Cannon is nice because if you can solve the ammo problem, and get an early upgrade on the Bronze one, it's basically the same as starting with one. Later in the game is always a REALLY tough question, because it depends immensely on what other synergies are present in your items. It can be good as a late game pivot, but I'd say it's more rare. The ability to scale it up with Crit, Burn, and Damage allows Cannon to scale up nicely against most enemies you'd face.
