Hi mike actually she used alkaline water and when i tried making noodles it worked best with white flour with a rather small grain size i think you guys used brown bread flour anyways i love your vids and hi from mauritius hope all of u are fine and in good health😬

I think all purpose flour is used not whole meal wheat flour. White flour or all purpose flour is different, it's softer and more elastic so it doesn't break.
