I just made this and, let me tell you, it is insanity-producing deliciousness!!! The end result is a crisp, crunchy caramel corn that is perfect... and no, it does not need to be baked. I used a Thermapen (instant digital thermometer) to ensure I properly got the sugar mixture up to 300 degrees F. I used the pastry brush dipped in water to wash the pot's sides also and only gently swirled the pot from time to time. I started the heat at medium-low and gradually increased to medium-high because I felt more comfortable in doing so, as I did not want to scorch the caramel (I've never heated sugar up to 300 degrees F before). Lastly, I did butter my wooden spoon which really helps avoid sticking when tossing the popcorn with the caramel. Everything actually worked. It worked! And the product is excellent.

Forgive me if this question has already been asked. I have watched quite a few videos on making caramel popcorn because I want to get the feel of it before I make it. Most everyone has put their caramel popcorn in the oven after mixing it all together. I like that you don't have that step. Makes it less work and we get to eat it much sooner. May I ask why we don't have to do this step with your recipe? Thank you so much for all your awesome recipes. I'm a big fan.

It really depends on how much you cook the caramel before you add it to the popcorn. I notice that the recipes that call for the caramel popcorn to be cooked in the oven, don't cook the caramel to the hard crack stage.

I enjoy all your recipes - I like the idea of adding the sprinkles before baking. I normally frost mine with different color frosting. Do you have a good recipe for Lemon Chiffon or Lemon Custard Ice Cream? I grew up with Carnation Ice Creams, they had a Lemon icecream that was to die for as a kid.

***** Normally the recipes that bake the popcorn don't cook the caramel to as high a temperature. Therefore you need to bake the caramel popcorn to get that hard coating.

Hi I had a question. Every time I do the caramel popcorn, it doesn't have that smooth texture like the store bought brands. At first it was real grainy because I was stirring it, but know I mix all the contents before putting it on the burner, It turned out a lot smoother, but still not to my satisfaction. Any tips or pointers would be greatly appreciated.

It sounds like you may have sugar crystallization. First, make sure you stir the sugar mixture before it comes to a boil so that all the sugar dissolves. And while the sugar syrup is cooking, you want to make sure that you wash down any sugar crystals that attach themselves to the sides of the saucepan. Because if there are any sugar crystals they will give the caramel a graininess.

I love your videos Joy (mostly because you give measurements in grams) but this one was a little confusing because there's no mention of when or if you placed the salt in the mix. Was it just for 'counter decoration', or did you actually use it at some point?

@@joyofbaking Thanks! I put it in just before the baking soda, and it seemed to work out fine. This must be pretty hard to mess up because it's not the only deviation I made! 🤣 First, I made too much popcorn (half again) and because the caramel seemed to be stuck at 225(f), I went ahead and added the baking soda and poured it in the bowl a little at a time. To get it crunchy, I placed the parchment lined baking pan in a 250 degree oven for 45 minutes, pulling it out and tossing to get an even coating every ten minutes. (something I remember seeing on another video) _AMAZINGLY?_ *This turned out GREAT!* I'm almost embarrassed to admit all this! Thanks Joy!

for those with out candy thermometer cook 3 minutes till butter melts medium heat cover with lid 2 minutes more remove lid cook 8 minutes more medium heat turn up heat medium high 3/4 cook 14 minutes remove from heat add soda works with glass top stove

While you have obviously got the time figured out for your caramel, on your stovetop, it may not work for everyone. You can use the ice water method, of dropping a small amount of caramel in ice water. The caramel is done when it forms hard, brittle threads that break when bent.
