Stephanie Jaworski of Joyofbaking.com demonstrates how to make a Lemon Frosted Lemon Cake.
This Lemon Frosted Lemon Cake is one of my favorite pound cakes. It is a sweet and buttery cake with a moist yet dense texture. As its name implies, it has a tangy lemon flavor that comes from adding both lemon zest and lemon juice to the cake batter. To further enhance the lemon flavor, the cake is frosted with a simple lemon frosting. This frosting is made by combining powdered sugar with freshly squeezed lemon juice and what I like about it is how it dries to a hard and crusty glaze. A lovely cake on its own with a hot cup of tea or coffee.

A gorgeous cake! A glazed lemon cake honestly can't be bettered. A 'must' for any Sunday afternoon tea! Very pleased to see a 'Kenwood' mixer being used. Hi Stephanie, I made this cake last night, it’s amazing, it baked beautifully, I couldn’t find my 9" pan so used my 8", it took 55 minutes and was perfect, at 52 minutes there was still a little wet batter, so I know it was just baked and as you said on your website don’t over bake or it will be dry. ….I love that you give the weight of egg, my 4 eggs were 229g so a bit over yours…..all your recipes I make always turn out so well, I just know it will work…..thanks again…love Jan xx❤xx

A good trick with the lemon zest and sugar is to mix it up and let it mature and then use it, it will infuse more lemon flavour into the sugar
