It's a self-healing cutting mat. They can be found in any arts and craft store or online store.

Unfortunately, I think that when cutting through thick cardboard or paper, the blade goes dull very quickly. It can be a hassle to change a utility knife blade, but they make a box cutter with snap off blades. That might be more convenient.

I am trying to cut lots of shapes out of 2-ply corrugated cardboard and my utility knife gets blunt very often... What else can I use for cutting? Thanks!

This looks like additive sculpture. Have you ever considered gluing a bunch of cardboard together first then carving away from like subtractive style? What are your thoughts?

Daniel, I never really thought about it. I'm not certain what you would use to carve away the cardboard.

I had the same wonder about what tools would be used. I have seen some things that looked like they were carved out of a big block of layered cardboard. I'm trying to figure out how they do it. Must be a saw of some kind?

It's just plain white Elmer's Glue that I use in the video.

Found an ergonomically-designed box cutter with a ceramic blade, that does not make my carpal tunnel syndrome flare up as quickly, for only 23 dollars and change, online.
