Watching a slightly older video you were talking about gdi fuel injector balance testing. Tapping into the high pressure sensor. What do we look for what setting on the scope would work? Make a video showing it?

I usually start with the "20/20 Rule" - 20v scale, 20ms per division (200ms sweep). This is usually enough time to capture 720 degrees of crankshaft rotation at warm idle. And that's how long it takes for all of the injectors to "fire". You can connect to the sensor signal wire at the sensor or at the ECM, whatever is easiest, and then adjust the voltage scaling to get a good image on the screen. Since different makes may show differently, I can't give you a hard and fast rule on looking at the capture or what it might look like, but I look for repetition and uniformity in the pattern as a whole. You can use an injector trigger signal to reference the pattern to injectors by firing order if you see something that catches your eye. And yes, I'm overdue for doing a video on this subject - I'll add it to the list!
