Today's recipe is Green Fig and Saltfish Pie. In St. Vincent and some of the other Caribbean islands, green fig is also know as green banana. Green figs are high in iron and are a great staple to add to your diet!

In St. Vincent we always peel green bananas before cooking it. It has a much more pleasant taste. I tried cooking it in the skin once and I disliked the taste. Green banana is used quite a lot here in boil up, or what we also call boil-in. In this case it must be peeled since it is being cooked with other ground provision, dumplings, vegetables and chicken or fish. Even if it is going to be eaten with stewed codfish, we peel before boiling.

Hello Cherry thanks so much for stopping by and for your input. I know all so well about boil-in as my husband is Vincentian and he taught me how to peel the green banana before cooking. He would not eat the green bananas if I boiled them with the skin on like we do in Trinidad my home country.

Cool! You can also leave out the saltfish but you will then have to add salt to the cooked green figs.

That's not the correct fish..it use to be a salted fish. Fish u would buy n salty it but now it's some shit called salted fish..a fish that u never seem to see its head. For all we know it could be snake or some shit. What we get in iyanola(st Lucia) is cod fish so this national dish is not so national.

Girl I so agree with you. My mom thought me that way as well. But my dear husband says its for pigs when you prepare it that way! And he just would not eat it! So crazy!

Love ur recipes only problem u talk too much..more cooking n less talking. I mean it's nice to shout out people n all that but use ur media time to attract viewers n not repel them. Less talking ok.. beautiful cooking always love Trini cooking but boy urll can talk.

its a compliment that you say that I talk too much as I am not really a talker! That's an improvement for me! Anyway thanks for your input. @@WhaToCook yes because talking takes a lot away from what u really show. Imagine wasting 15mins to display n prepare ur recipe only to know that 7mins is all talk. Yes it's ur channel but if people don't view it then this won't sit well u n of course you tube because that's how they gather souls..thru the videos urll put up. I always say if given a chance to expose ur self to the world do it with style n class. We Islanders are looked upon because we are so small but that's okay bkuz small is beautiful. I prefer to live in an out house than to live in these big landmass they call continents n countries. U can talk but make ur talking to the point n exciting. Let food talk for u..I mean u not a mute but sometimes it's better to pretend that u are one. I love ur recipes..I'm a big fan of Trinidadian cooking n I've tried majority of yr pies. I never really watch ur video to the end just because of ur talking. I just take the Ingredients n fast forward to where u add them in I execute it on my own. If I miss something I just play it back to where I missed. Ur videos are long so make it Interesting. I laughed when u said a compliment wow...well who ever asked u to start talking gave u the wrong advise. Keep up the good work sister n I await more delicious recipes from u. N also that's the best way to cook green banana..it boils with all its nutrients. That's how we should cook all ground provisions except yam which should be roasted.
