This was the very first rice I made when I was learning to cook. Didn't come out like this because I forgot to add a few things. I love okra so I added it to the rice. Will try your version for sure. Thanks for sharing.

I made it !!! Turned out good. I added some mushrooms and celery too. First time I ever tasted coconut milk. It’s good . Very rich. I also made some Cajun shrimp .

I loved your dish! For me it is a main dish, I find it that good. We do not have okra in my country, so I suppose I could use chopped zuchini, and add all the rest of the ingredients. Never did it occur to me to put pumpkin in rice. Come to think, I have never tasted okra, it must be good!!! Thank you. Much love to you!

Being diabetic, used parboiled brown rice it so the other veg wouldn't be cooked to mush (it doesn't make my blood sugar soar like the white jasmine does) and I used sweet potatoes instead of the pumpkin, as that's what I had on hand. This was very tasty; definitely a keeper recipe. Thank you. I love okra.
