Well, I learned that I don't roast my tomatoes long enough (although I do it on an open flame - should take a little less time). However, I do like to burn the garlic till its charred - it adds a wonderful and unique flavor to this dish. Thanks for the video. Great chef!

I roast my tomatoes, garlic, pepper, and onion all wrapped up in foil on an open flame. The foil keeps the juices inside and prevents a mess. They all get roasted nicely within 15 minutes. Tip: I use the grill shelf from the toaster oven to rest the foil on. Works perfect. Also, in the chunkae (sp?) oil I add a few slices of pepper, a few slices of onion, and a few crushed garlic cloves. Might as well flavour the oil as you're heating it up I say. I got these tips from Choka makers doing this for 50 years or more and theirs was LASHING! So I follow their tips. Just passing it along.

I never roast my garlic nor onions when making choka (Caribbean). The traditional way (which I prefer), is the raw pungent flavor of both. However I can appreciate ways others do their with enjoyment.

soak with hot water or.. place a laundry dryer sheet in it with hot water and let it soak. works with baked-on oven dishes as well. A lil bleach cleaner works as well.
