Love how Carla explains soul food vs southern food. I just started reading Michael Twitty's book about soul food as well. I also hated okra as a child, but now love it.

I am igbo, top 5 igbo soup is okro(okra) soup that we eat with fufu. The ideal combo for us is with corn meal fufu. We even have proverbs around the plant itself. We say that the okra plant never outgrows the farmer. Its all about the harvesting coz no matter how tall, you bend the plant to harvest it. Has to be harvested very tender too.

Okra...where do I begin with this hella-complex love thang? When I was young, my dad always grew okra. I could barely wait for them to mature because I loved them boiled with a pinch of salt. As an adult, I grow them myself for everything from stewed okra with tomatoes, Tasso, and sausage (a creole staple) to gumbo (another creole staple. As a matter of fact, I just risked it all to drive to Louisiana a week ago to grab smoked meat specifically for okra. I love it fried and pickled. I must try it grilled and roasted. I just tried it raw yesterday, but I knew I’d love it. So many feels in this video. Thanks Karen and Carla. Something wonderful is happening here. 🥰

Love Carla... Ive always been turned off of okra because of the slimy texture. But that slime has got to be superb for digestion and elimination which is essential to good health. My mom is from Georgia and my dad folks are Senegalese so no okra there. I think, once you figure out how to prepare it properly (to your standards) it can be palatable. I wonder if it would do well blended in a green smoothie with pineapple or apple/cucumber.

Grew up with okra, diced tomatoes, tomato sauce, onion, garlic, ground meat over rice. Near the end of cooking, to eliminate the slime, add apple cider vinegar. You will not be able to taste the vinegar.

Grew up in the Caribbean avoiding okra, never passed my lips because of the slime. Funny what you say about not thinking about how it tastes. I have no idea about the taste. Never even thought about frying it. Don't know if I can get around the image in my head of the slime.🙄

African American food revolves around more than just chitlins and parts of the hog. I have been trying to stress that for 5 years. Okra is one of many foods our African ancestors contributed to American cuisine. If we do a deep study into the food ways of our enslaved ancestors starting from the 18th century to 1865 we will reclaim certain aspects of our food culture and mainly our health.

Great show topic. The look as a child , made me sick. It was overcooked . But mixed( fried) in my greens or black eyed peas taste great. My aunt 🤮always overcooked it . My mom’s were good. Also, BLACK FAMILY, Okra you know if you’re at least 50-51yrs of age or older, fried okra with hot sauce and a some fries, sweet biscuits with a two piece Breast-Wing and a leg from CHURCHES CHICKEN -lol
