In NK Jemisin’s short story L’Alchimista, a grumpy perfectionist chef in Milan, is challenged by a stranger to cook extremely complicated “recipes” that have magical results. You made me remember this wonderful story. One of my favourite lines “Who is to say plutonium is more powerful than, say, rice? One takes away a million lives, the other saves a hundred times as many.”

I made this. It's delicious!! True you don't need stock. This is the 1st time I cooked down the sofrito so much. It really made the difference. Also, lots of youtube cooks demo recipes that have no flavor NOT CARLA!!!! Believe, it's amazing.

I made this today as a New Year gift to myself and my family and everybody (including my 4 year old) LOVED it! Be sure to serve with bread to sop up all the delicious broth. Thank you, Carla, for bestowing all your loyal followers with this most excellent idea of a New Years dish. Cheers to a (hopefully) good year ahead for us all 🙂

I've started to give the carrot a head start in the food processor when making a sofrito. Makes the carrot a bit finer, but helps avoid the chunks!

Never had kale, leek or lentils before. Hands down one of the best soups I’ve ever tasted! Forgot to pick up tomato paste. I improvised by draining a can of diced tomatoes, cooking them down in a sauce pan with olive oil. Used the reserved can liquid for the soup.

i riff something similar to this with canned butter beans when i have sausage that needs using up and it tastes amazing (and takes 20 minutes with canned beans). excited to try your recipe, i'd not thought of putting cumin in! i usually use ras el hanout, because as weird as it sounds it works really well with the sausages that i buy.

A signature phrase in Carla's videos is "a bit of olive oil". I guess I need to redefine my concept of "a bit". I keep imagining an industrial sized barrel of olive oil with a hand cranked pump in a closet somewhere in her house.

Love this soup minus the kale so I would just sub in fresh spinach at the end with the sausage. I often overcook lentils so I might go with chickpeas or a combo. Love having recipes that you can customize to your location and climate around the world. What a great use for day old crusty bread. Thanks for the warmth.

I can't remember where I saw it, but someone used a pastry cutter to help cut up the meat sauteing in the pan. One of those utensils that helps you cut butter into flour. They were using a newer modern pastry cutter, I tried it with my vintage pastry cutter which is thin wire and it didn't work.

Hey, Carla! I’m a bit lentilled-out right now, but I’ve got chickpeas in the cupboard. Have you tried them in a soup like this?
@CarlaLalliMusic123 Жыл бұрын
Will totally work, but the cook time will be quite a bit longer (assuming we're talking about dried chickpeas??). Wait to add the greens until the chickpeas are getting pretty tender. Top off with water as needed during cooking. Another quicker-cooking bean is flageolet. xoC.
