Dearest Carla, I am writing to thank you for this gift of a recipe. I added roasted red peppers and cherry toms to the rice mixture, olive oil and garlic to the sauce, scallions and extra cilantro. This was so delicious and after quite a rough few weeks brought me so much joy. This does deliver in so many ways and creeping into fall, it makes for a great weeknight meditative meal of brightness.

I "spinned it", as the cookbook calls it, with chicken stock and garlic in the rice and wow, that was delicious. Making that sauce in my low-end blender was a nightmare though. Way too thick to get a vortex going. Next time, I'm just making guac or having avocado slices.

It's something I've wanted to try, but your recipe was more approachable. When I got to the point where I removed the chicken and turned up the heat, I entered the crispy rice zone. Unlike your instructions, I would turn over the rice and brown the other side. I ended up with the most amazing crispy rice I could have imagined. Thank you so much for being part of this culinary adventure.

@@CarlaLalliMusic123 Ok, so this recipe is on permanent rotation. I find if I treat the bunch of cilantro like cut flowers in a vase I can stretch out one bunch for 3 meals. I keep the sauce in a jar in the fridge and it lasts 2 weeks. I also use it on omelets.

Hmm. I have all the ingredients except the cilantro, but I have a bumper crop of sorrel so I'm going to make the green sauce with the sorrel for a lemony flavor. Maybe a little basil, also a bumper crop. But that technique, oh yeah. Hating on the word moist is so 2000, kind of like hating on Nickelback, which has been proven to just be a meme and Nickelback was a great band.

This is one of my favourite recipes from your book but i usually skip the last crisping step because the first time i did that, it was sticking too much and i didnt get to eat the crispy rice :( not to mention the nightmare of washing the pot lol but really excited to try your tips next time i make it!

People tend to overestimate how long chicken takes to cook. 30 minutes is more than enough for a chicken leg.

i have the book, and this recipe doesn't seem to work out whenever I make it--the chicken is always undercooked while the rice gets overcooked. The flavors are spot on, but I find it takes way longer than the recipe says it will to cook, and the chicken and the rice have two conflicting cooking times.

Maybe try letting the chicken brown for longer (perhaps at a slightly lower temp for a few more minutes). Since leg quarters won’t overlook like breast, you can let the chicken cook most of the way during the Browning stage. You could even flip it and cook the other side a few minutes.

I was going to suggest the same thing as Zachary did. But also, perhaps have the chicken cut up so the legs and thighs are separate. It'll still come out good and won't take as long to cook. And don't be afraid to brown it really well on both sides. She didn't do that, but if I were making this recipe I would brown both sides. Recipes are a guide, don't be afraid to make changes like this. Some leg and thigh pieces can be really huge, and frankly ones that are really large won't cook in the same amount of time as the rice does.
