Vegetarian "Spin-It" recommendation: chopped veggie sausage+asparagus! Pan-fry both and stir them in at the end with the sauce. Though I like to do a pan-burst cherry tomato sauce with mine, instead!

Yes. In which case I'd personally cook the sauce longer, to mellow out the wine. But you should try it out for yourself and see what works for you

If you want the seafood flavor you could add some nori to the sauce! For the texture that the shrimp is adding, maybe you could use chunky diced squash or eggplant, maybe toss it into the butter after the garlic but before the tomato?
