If you are carnivore but still drink coffee, you can try the base recipe and for flavoring just add a double shot of espresso. That's my go-to although I do 6 yolks instead of 2.

Big fan of Keto Chow, their Butterscotch flavor is great, and I use almost this exact same recipe to make Butterscotch Custard on the regular. It's a perfect base for ice cream, naturally, but I just love it warm, right from the pan. Soooooo good.

I always make my own lc ice cream from "scratch". I joke and say I lost all my weight eating 1 pint of ice cream a night. Joking but not joking lol I bought some keto chow recently to use as an ice cream base.I spent 2 days over Easter break googling and trying recipes using keto chow to make ice cream. I was nervous, and rightfully so because messing up could be pricey. Every recipe I tried was a fail!!!🤦🏻♀️ I dont even want to talk about how much keto chow I "wasted" . I still ate them but ice cream they were not. Out of all the recipes I found in the whole www I did not see one like this!! Lol I'm gonna try it! Thanks!

the "non keto chow" recipe is the same except leave out the water and keto chow. you wont have any flavor though unless you add an extract or other "flavoring" liquid/powder. it will be just frozen cream and some egg yolk.

Mmm! Fruity flavored cereal might be the closest thing to my fave red licorice keto chow that got retired. I tried this with the banana keto chow. Tried a small bowl of it before freezing. My recipe is easy. 1/2 cup heavy cream per 1 Egg yolk (I do 1.5 cups and 3 eggs because that's what fits in my machine), 2TBLs allulose, 1 TBL vanilla bean paste, pinch of salt. I use a stick blender to mix, chill then churn.

12 ounces cream cheese room temp, 1 cup hvy cream, some key lime juice, Allulose to taste for the family, 1/4 cup sour cream 1/2 tsp Real Salt, 4 egg yolks, 1 tbs soft butter. My granddaughter was studying so I mixed it all by hand. Left it in the fridge overnight put it in the frozen freezer bowl left in the freezer overnight and mixed it for 20 minutes. I placed in an airtight container and put it in the freezer. Cleaned the freezer bowl and put it in the freezer. Ready for my next batch for my great grandson’s specifically with colostrum. Grandma style. 🤣

Looks good. I assume if no keto-chow, don't add any water. My son or wife typically make the ice cream. He whips cream adding allulose and/or erythritol + vanilla or cocoa powder. And freezes it. She uses a Kitchen-aid ice cream churner she bought, and both are good. Neither are quite like store bought - but they use emulsifiers and who knows what not to get that super hard or icy crystal stuff that we tend to get at home. If I'm making dessert, I tend to make what I call a parfait - not sure it is one, but I basically just make flavored whipped cream, cuz that works - it's fast - and I like it. But I appreciate ice cream and may have to try this. I'll send my wife and son this link - I think he's made your tortillas and made keto or near-carnivore enchiladas. Oh I tried your cot. ch. + hamburger burgers the other night. I had to use a knife cuz am currently out of town - and the whirling blade of death for the food proc. here is missing. Grew legs and ran off! So I knifed a lb of burger meat on a board, and knifed it more ... and more. Then worked in half a tub of cot. ch., which is what we had left but seemed almost enough. And I added grilled, browned onions, some, cuz I'm not a very good carnivore all the time - and I'm a sucker for onions. And s and p and ... maybe some herbs. Oh and since I was never gonna really emulsify it by hand, I added an egg and mixed it in well. Anyway, it was not emulsified enough, but it was darn good and I can see where yer going with this. Gonna rewatch and try it when I get home. Thx (I prolly shouldn't have put onions so I could see more what was going on w the meat/cot ch combo, but I could pretty much tell and it did taste good - and the onion's extra flavor was darn good, too)

that looks tasty I started making ice cream soon after I started carnivore, but I use an egg yolk custard base with 2 cups heavy cream, 2/3 cup of allulose, 1/4 teaspoon chocolate Carmel LMNT electrolyte powder heated to just under a simmer about 165-170F with half the allulose then temper the 6 yolks beaten with the other half of the allulose, then fully combine and thicken it over heat (do not boil) then add 6oz of crushed unsweetened Ghirardelli cacao chocolate bars and or a tablespoon vanilla extract mix until all the chocolate is melted and combined then remove it from the heat and let it cool to under 125F to not kill the bacteria in the yogurt then add 2 cups of plain whole milk active culture Greek yogurt and one table spoon maple syrup for the yogurt to feast on you can also place it in a yogurt oven or dehydrator over night to make sure the yogurt is activated if you are so inclined , then chill overnight in the fridge before churning it in my Cuisinart ice cream maker so good next time I'm going to make chocolate covered macadamia nuts and add those to my plain frozen vanilla yogurt custard I know it's not totally carnivore but its low carb, I'm actually more of a dirty carnivore anyway I'm down to 178 from 206 (my goal is 165 BMI) I started just after last thanksgiving. I really enjoy all your videos and ideas keep up the good work

I made your recipe, but then I took the ice cream out of the freezer after an overnight stay, and put it in the fridge before going to work. When I got home, It had become soft serve ice cream, and the next day, I had a really nice mousse, just by letting it stay in the fridge, instead of freezing it the entire time. Do you know of a better way to get a soft serve style ice cream with this recipe??BTW, I did the mint chocolate, and added some 100% cacao shavings, so I had mint chocolate cjip ice cream. My favorite, though, is the peanut butter-chocolate. Tastes like a frozen Reeses cup

Glad you enjoy! Soft serve is tough because it’s made by a machine that keeps the mixture moving and the ice crystals broken up really fine. That’s tough to replicate at home.

10 minutes on the counter does wonders. It doesn’t get liquidy when beginning to melt because of the ketochow. I’ve also heard it can add a spoon of vodka when making it to keep it softer. 👍🏼

Remember they’re meant as meal replacement shakes so you drink the shake in place of eating a meal that day. Using them for recipes is another fun way to replace your meal. So you can have ice cream for dinner. Unfortunately quality products with good ingredients are more expensive. That’s generally why cooking for ourselves is better than buying pre-made meals. Higher quality ingredients and less expensive comes with the work of homemade items usually.

I know that can be very difficult. Local dairy farms are about the only place. Usually I just accept a bit of the gums in my diet and try to limit these kinds of recipes because I can’t find any cleaner cream very easily. 😊👍🏼

Did I screw up? I stirred it after it was in the freezer for 2 hours. It was liquid on the bottom almost... I normally stir no churn, but I've never made this version before. xo

No worries. Just needs to freeze longer. It can take a while (even overnight). 😊👍🏼

Hey Debbie. Welcome. To me, allulose has no aftertaste. Of all the keto sweeteners it is my favorite followed by the erythritol monk fruit blends they sell. Stevia has an aftertaste I don’t care for, and others have weird chemical flavors to me. Just my preference personally.

@@ChrisCookingNashville I love it! The first time I made it, I ate the entire thing in one day! I made it again tonight. No sweetener, so I chopped up some brown butter bites and added them to the mix. I divided and put the ice cream in 7 small containers so I don’t eat the entire batch at once again. 😂 Can’t wait for it to freeze so I can see how it tastes with the brown butter bites!! Thank you again for sharing your time and recipes with all of us. 🙏

No worries! Welcome and I’m glad you’re here. So if you want it to he straight up carnivore you don’t need to add anything (even sweeteners), but if you allow yourself to have that kind of stuff you can flavor it with extracts like vanilla or almond or fruit flavors, you can add cinnamon or cocoa powder, you can use whatever sweeteners you like, etc. and it will work really well. It’s easy to customize and experiment with. 😊

Hello. It depends entirely on what sweetener you use, what flavoring powders you choose to add, and so on. I’d recommend getting a macro tracker app and put everything into it rather than trust calculations by someone on KZbin. Their recipe may or may not be exactly like yours and you can quickly overshoot macros by taking their word for it.

Adding a little guar gum can help significantly. There are some recipes out there for keto ice cream that do that I believe.

When you whip cream you’re adding air into the mixture. When you add the yolks and the keto chow into that mixture if you mix too much you will knock all that air back out and it becomes liquid so instead of being soft because of the air you whipped into it you end up with a liquid that freezes into a hard chick of ice. Ice cream makes churn the mixture to keep the ice crystals broken into small fragments and to keep air in the mixture so it stays soft. Allulose also contributes to this texture. If you do both, it’s helps a lot. It’s not as soft as something that’s made with an ice cream maker but it’s much better than just mixing it all together and freezing it as a chunk. This is why the ninja creami maker using a blade to pulverize the frozen mixture. It’s essentially breaking up the ice crystals and adding air after freezing instead of before/during. You can also go old school and use a bowl inside of another bowl with ice and salt and stir the mixture constantly to freeze it with similar results but that’s a pretty intense arm workout.

@@ChrisCookingNashville So I have a basic ice cream maker... you recommend whipping up the cream til its more of a creamy whipped texture instead of liquid before adding it into the ice cream maker or is that just better when youre freezing it in a bowl?

If using an ice cream maker it won’t really make a difference as that’s what the ice cream maker should be doing anyway. The whipped cream is more beneficial in a no-church ice cream like this recipe is.
