To encourage others, my brother had a "widow-maker" heart attack a year and a half ago, which damaged his heart to the extent that they cannot do heart surgery to put in stents. A part of his heart where they would need to put stents is no longer viable. He gradually had become weaker and weaker, with shortness of breath, no energy, and pain in his extremities from compromised blood flow, gained weight from being inactive. He was so sad that he could no longer do the active things that he always had done, like hiking, canoeing, pursuing his career in nature photography, or work around the house in the garden which he loved. He even was reduced to using the mechanized grocery cart to take him around the store. I finally talked him into trying the carnivore diet because I had read about how life-changing it could be, especially from some people I trusted like Jordan Peterson and others. I have been shocked about his progress in the three weeks (only 3!) that he has been on the diet. He's lost 14 pounds, no shortness of breath, pain gone, not having to take nitro, not only able to walk around his property, but he's been out hefting bags of mulch and putting it around his flower beds which he planted! He power washed two decks, among other things he's done. And he is now looking forward to getting out in his kayak or his canoe and fishing, and back to his photography. His cardiologist is amazed at his progress. He is visibly healthier looking! Like a different person, the doctor said yesterday. The only pain he's been having now is the regular discomfort from using his long unused leg and arm muscles, from kneeling while planting things and going up and down two levels of decks, considering that he had been sedentary for so long. I am thrilled for him because he is such a deserving person. I admit I had a hard time convincing him to try the carnivore diet, because on the face of it, the diet doesn't make sense....but it works! He says that it may not lengthen his life, which remains to be seen, I guess, but it has restored the quality of his life which he thought was gone forever. I expect it to heal him and lengthen his life too. Sorry this is so long!

Your changing diet may have improved symptoms. Before your carnivore diet you may have eaten PUFAs in high amounts and since you replaced them with saturated fats mostly, you might notice an improvement. Most people can't live or metabolize hormones without any simple sugars tho.

I stood a while in thought and realized my beater was stuck on the turbo speed setting. I tried again hand beating. It worked. Mystery solved. I've now made the best ice cream known to man. I made it, and it was delish. Just one note. The salt should be added to water and then add the ice. The cold water surrounds the aluminum bowl completely, whereas if it only had ice in the bowl, it only cools where the ice touches the smaller bowl. I added Allulose for a little sweetness and some vanilla extract

Adding a little salt to the cream gives it a hint of sweetness. If it tastes salty, you’ve added too much salt. This is how I add sweetness to a cream latte without adding any sweetener.

1 pint cream, 4 or 5 egg yolks. Use ice bath, metal bowl if possible for ingredients. Hand mixer on low for 10 minutes. Cover whole setup with towel and freeze whole thing, including ice bath for 45 minutes hours. Take out. Hand mixer for 5 minutes more. Freeze again. Modify as desired with sweeteners, flavors, etc.

I made this yesterday..... its a game changer for me... added a little something back in that I was missing.... I did add a tablespoon of vanilla extract which I know is cheating but I cheat very very rarely. I also used a stand mixer and couldn't therefor use the ice and so I did what someone in the comments suggested and froze the metal mixing bowl for an hour or so first..... I use HWC (1/4th cup) along with 2 tbsps cream cheese and the Atkins Creamy Vanilla protein shake (2 net carbs) and put it in my bullet blender & it's fantastic! My own milkshake. Plus, I get my fat in as well as vitamins/minerals in the shake.

@@lindalong5052 Buy pasture raised eggs from regenerative farms. Even according to WebMD (as conventional as it gets), only 1 egg in 20,000 contains salmonella. So at 1 egg a day, it would take 54 years to run across one. That rate is higher for corporate farmed eggs, less for eggs farmed sustainably.

For the ones who wanna put some sweetener in it use allulose. This keeps the ice cream soft in the freezer and works just like real sugar texture wise but it’s 100 percent zero carbs. Enjoy everyone :)

No sweetener is zero carbs or calories. It is low calorie and allowed to be omitted from "sugar content" on food items. It may not be enough to personally care about, but not zero. "Zero" is allowed to be used when there are less then 5 calories per serving.

My dog after the age of 10, began throwing up his iams dogfood kibble. I switched to an expensive brand Farmina and it was fine for a little while. I noticed my dogs joints were aching and walking difficulty and he hurt one leg jumping off the couch. I started feeding him turkey and meat and the things I eat. I’m carnivore/keto/fasting lover currently. But he started reversing in age. He’s a young almost 12 now, more energy than ever. Because I've been really ill for many years, infact I've spent the last 40 plus years in agony all over my body, with horrific stomach and bowel problems, Fibromyalgia, ME, Polyarthralgia, osteoarthritis, I was pre-diabetic for a lot of it (not now), ive gradually gone from crutches to fulltime wheelchair user, due to nerve damage in spine, shere exhaustion, and many more health problems, the list goes on and on, to be honest I really thought I would be dead by 60, found carnivore via keto, started introducing meat a year ago, and reducing veg, went complete carnivore 1st May this year. So, even monkfruit is a no no? The transition can be a little hard. I started carnivore 8 days ago. In one week my body pain has left the building. Clothes are looser but haven’t weighed in yet. A neighbor friend has been on carnivore for 9 weeks. She has lost 20 lbs and her numbers have stabilized. She also walks 1-1.5 hrs a day. We get pasture raised grass fed meat from a local farmer who was terribly diabetic 4 years ago. He started carnivore and lost 100 pounds. I forget which number was over 800, but his blood sugar is now stable at 80. His cholesterol and triglycerides are stable in the low optimum range. It is so very helpful to see what has worked for others when getting started. I appreciate everyone sharing their stories.🙏🏼

Real monk fruit is perfectly fine, and might be the best natural sweetner with no sugar/carbs out there. Most monk fruit products are not even monk fruit, kinda like stevia products. or have very little in it. The real stuff is moderately expensive but its leagues better than any other sugar free sweetner.

I always suggest that if you know you can not moderate, do not temtate!😂 But for those that do like to switch it up, can tolerate dairy and a little treat now & then, it is so much better making your own and know what's in it. I have had blueberryitis lately. Even eating butter is not stopping me from wanting my frozen blueberry treat 2x a week. I just blend frozen blueberries in the food processor. Instant sorbet, so delish. Sometimes I add some heavy cream and call it blueberry icecream. 😂 It helps keep my hubby, a sugar addict, from going off track. Otherwise, I think he'd fold. Hell, I even made hi. Strawberry icecream the same way but added allulose. 😋 He was like a little kid, grinning over his sweet treat. I serve myself 3-4 teaspoons and give him 2 scoops, 😂.

I made this recipe and it is truly delicious. I had difficulty though, getting the cream and egg yolks to thicken up with my mixer. It seemed to take too long, and still not get thick enough to put in the freezer. Nothing worked. I have adrenal dysfunction, so some days it's really hard to stand for long minutes at a time. So I mix the egg yolks till creamy in a separate bowl, and whip the heavy cream in another bowl until it thickens, then I mix the yolks into the thickened cream, then I place into the freezer. It thickens faster and it works out great. But I decided to buy an old fashioned ice cream making machine, I premixed 4 pints of cream and 20 egg yolks really well, poured into container and placed into tub filled with ice and rock salt and within an hour we have delicious soft serve ice cream that tasted even better than when I made it in small batches. We love it and make a bunch of ice cream every other day and enjoy a pint each before bed time!

Pro tip: If you have a pasta spoon with small holes/slits at the bottom, you can very quickly and easily separate the yolk from the albumen...without breaking the yolks. It's extremely effective and easy. I usually just crack the egg into the spoon, lift, and tug the albumen a little if it decides to cling to the yolk. Also, if you like poached eggs, use a nonstick frying pan with ~ 1 inch of water. Depending on the pan size, you can make multiple poached eggs at the same time. Fresh eggs from the store work best. Just be sure to break the egg into a small bowl first before "gently" sliding it into gently simmering water (3/4 heat).

I have no use for egg whites (so far?) but I use the surgical gloves from Costco (only ~22-cents a pair; and I'm like a cat: I HATE getting my paws .... sticky!) and carefully crack the eggs, then shift each hand to hand over the open garbage can. I also will try to 'clip' the ... whatever that stringy thing is off... so I have just eggs.

Haagen-Das was mentioned and I'd like to point out that's the ice cream I get. It's not carnivore technically and does have sugar, but that's the worst I have to say about their main flavors. I stay clear of the really fancy flavors, but vanilla, chocolate, & coffee are SO freaking good and nearly guilt free! No gums, artificial flavorings, fake sugars, seed oils!

Mmmm. I take frozen blueberries (never thought I'd like frozen ones, but trust me...❤) and grind/ blend until smooth in the food processor. Like an instant sorbet without sugar, just plain berries. Sometimes, if I need the extra fat, I add some heavy cream and call it instant blueberry ice cream 😅 Hubby loves it and satisfies his sugar addiction, keeps him on track. For me, just a little treat. Sweets wasn't my problem. So some blended blueberry sorbet is perfect for me. Strawberry is ok, but needs allulose. Banana is to die for, no allulose needed. Very sweet. To this I always add cream to curb that sweetness.😋 The mixed berries are good, I added no sugar to that. Going to try some radpberries with squeezed lemon in it as a sorbet. These have been weekly or bi-weekly treats. And for me, a little does it. For hubby, the sugar addict, this keeps him happy. And I give him the bulk of what I make, maybe 1/2- 3/4 pint. Only do this IF you can honestly reserve and control yourself on the sweets. Some people, this is a cheat to them, and it leads to other bad habits. Know yourself, be honest with yourself. Nobody else matters, you live in your body. You know whether or not you can honestly handle some things.

@CircumambulationMaedia Agree. Yes, you can cheat whenever you like on carnivore, but realize that's what it is. Some carnivores (like me) believe it's perfectly fine to eat berries in season (particularly wild berries). But it's just as fine to eat a piece of cake at a friend's birthday. There is zero difference. You will still get cravings for crapfare the next day. Best next-day self-care after cheating is fasting, btw. Can't shake those cravings? Trust me, just drink water and don't eat a thing, esp right after waking. Usually takes less than a day before you're like "Oh yeah, that'll make me feel like crap" fr fr and the cravings just disappear. Good luck y'all

Just to let your watchers here know, I followed your instructions to the Tee & after 15 min with electric mixer, it was still very liquidy so we put it on med then for another 10 minutes before it began to peak . The salt worked really well to keep the ice from melting and very cold. I used stainless steel bowls. It's now in the freezer for 45min. I hope the rest will work out. We plan on adding a little vanilla. Thanks for sharing!❤

Even after 45 minutes I just have a big bowl of foam… incredibly frustrating as I ended up just throwing the watery liquid in the end and my whole kitchen was dirty from the foam slinging everywhere

I bought a small microwave rice cooker which has an inner ceramic container and a concave plastic lid. It was only $10. I bought a second one to make ice-cream. Put the ceramic container into the freezer. Fit a couple of freezer gel packs into the concave lid and freeze together with the ceramic container. Freeze at least 2 hours. Once ice-cream is mixed, pour into ceramic container and cover with gel pack lid. Freeze for 45 mins (as per instructions above), whisk and put back into freezer until set. I think with an immersion blender for the initial whisking, you won't need to whisk a second time, because those blenders make a very thick smooth emulsion. Will have to try that out and see. You could also use a metal, ceramic or glass bowl or pot or baking dish. A Pyrex serving dish should work too.

I made this ice cream and it is AMAZING.!!! I couldn't eat that much in one setting so i froze it in 1/2 cup containers and just finished the last one and it was still perfect after thawing about15 minutes. I have tried some other recipes using cottage cheese and other ingredients producing disappointing results so I had low expectations but was pleasantly surprised how delicious and perfect ice cream texture this turned into. All thumbs up!!!

I used to make a bunch of (mostly) carnivore ice cream (non-carnivore add-ins to try: vanilla extract, mint extract, 100% baking chocolate or powder, peanut butter or various nuts) with a ratio with fewer eggs. The results of your recipe look and sound amazing so I'll definitely have to give your way a try! How hard does it freeze? Mine freezes really hard so I wonder if more egg yolks and less cream like yours would make it a tad softer when frozen. That way I wouldn't have to let it thaw out as long before I can enjoy it! Hint: if doing mix-ins, it might be best to mix them in after the initial 45min freezing so they stay suspended instead of sinking to the bottom; or at least first whip up the egg and cream mixture before adding the mix-ins.

Ive been doind this for over a year. Its good and I'm not a real ice cream fan but once every 3 months or so I will have some. This recipe never raises my blood sugar. The key is to have everything COLD. Coconut cream makes a better tasting product.

@@mudkip040301 With raw dairy you can drink and use that since it doesn't affect lactose intolerant people, in fact it reverses it. My dad was lactose intolerant, now with raw cow milk he isn't anymore and it fixed all his digestive issues.

Awesome great video. I used to make my own ‘normal’ ice cream with just double cream and milk and a little sugar, so it’s probably not so different. As you did you need to take it out of the freezer after a while and stir to break up the ice crystals that form, then freeze some more. Total freezing time was a few hours i think. Adding melted 90% dark chocolate would work too..low sugar real chocolate/cacao..

Totally yummy and great video on revipe how to. A couple corrections though admittedly technical: Salt does NOT lower the melting point of the ice. It accelerates tge melting of the ice. It also lowers the freezing piont of the water from melting preventing it from refreezing. The ice melting is endothermic and tge salt leaves a film of melted salt water on the ice cudes surface which will not freeze until -5 F or37 degrees lower than plan water. This makes the water, not the ice much coolder than the ice itself. The water also displaces the air pockets you have between the ice cubes which removes that insulating property. And furthef gives more surface area contact betweenbthe sub zero ice water and the bowl holding the ice cream. Also this is NOT ice cream its frozen custard. Ice cream does not contain eggs custard does.

❤📝 Thanks for this recipe Bella!!! Because I have a sweet tooth I will need to add something for additional sweetness. Glycine is needed for the body and has a sweet taste so I will start with that, then try honey if it isn't sweet enough. Lastly I might try this with stevia (just stevia only: one ingredient... with no other fillers) to make it sweet enough for me. Vanilla extract (with no alcohol) is also something I will add. Hopefully the glycine and vanilla are enough.

I have a compression ice cream machine… I use the lmnt chocolate flavored packs to flavor my ice cream… its awesome! I also use Dr Kiltz ice cream recipes for this… I find that 1 whole egg produces a less icy ice cream along with the cream and a little vanilla extract… also when I use the lmnt packets I do not add extra salt to the recipe 👍

What I have found is that the mixture was not cold enough. Try freezing your bowls first. Making sure your eggs are very cold and the cream was almost frozen. I have made ice cream that stayed liquid so I refrozen the ice cream bowls and kept mixing every 45 mins. Finally it froze.

I have spread my extra egg yolks on my dehydrator trays and dryed them. I then scraped them into a blender.once the egg whites are turned to powder, I can use it as egg white powder. I use half bought and half homemade

My AC went out last year and for the time I had to be here (instead of at my mother's because her AC worked), I filled a couple of ziplock bags with water, froze them and rested them on my legs. Also a wet towel or paper towel on the neck. It helped, before I did that I felt sick from the heat.

Honey packs a lot of sweetness per calorie, more so than any other (natural) sweetener. Call me a normie, but I concur with the suggestion to add a bit and will do so when I attempt this. 1 or 2 tbsp would go a long way for a palate not habituated to excessive sweetness.

I made my first batch tonight, and I just tried it after 2 hours in the freezer. It was outstanding, it will be better once it is fully frozen. I added some fully natural vanilla, and a little bit of honey to my batch, I didn't measure anything and made a double batch.
