Yes this is a better alternative than grocery store ice cream. People can be dogmatic about what is carnivore, and many have a problem with the insulin spike from the honey. However, when a person is fat adapted their insulin spikes fall faster than regular carb based people. Once the insulin is low again you will burn the fat that was stored from eating the high fat+carb combo. Unless it's something that is consumed all of the time, and was acknowledged that it shouldn't be, it can be a perfectly fine option and may help adherance to a lowcarb/CV diet.

What I've done in the past is place the liquid mixture in a 9X13 pyrex glass dish and sit it in the freezer. It freezes a lot quicker. Then you can transfer it to a smaller container. Thank you for the recipe! I never thought about putting glycine in it.

I might make some but without the honey, monk fruit sweetener instead. This is similar to how I made eggnog, I just added ginger, nutmeg, cinnamon and rum extract to it. Turned out great, can only imagine it frozen 😋

Thank you! It is so funny you say that... they did not eat the ice cream. 4 weeks passed and the ice cream was still in the freezer. What did we do?WE ATE IT FOR THEM..lol. What can you do? When you have an abundance of sweets and junk food, and ridiculous flavours of ice cream available at your disposal...who cares about a healthier version? Sad reality :(

If you want to make this completely animal based you can make it parmesan ice cream instead of vanilla, I know this can sound weird, but from what I've heard it actually tastes pretty good.

I use all of the egg and use cocoa or lemon instead of vanilla . I found some vanilla extract has sugar in them. Lemon helps with vitamin C.

If you remove the yolk skin you will remove the "egginess" taste that might still exist. They use this technique to make "Pastel de Belem" in Portugal, and condensed milk puddings in Brazil.

Elderly people start to lose their sense of taste, just like all the other senses. Sweet is the last to go. I was helping to care for a friend's mother who had dementia. We made lots of keto puddings, ice cream, cakes and cookies for her and she improved. She also enjoyed soups and quiche. The trick is to season the food well enough so they can taste it.

6:36 Wow, this has never occurred to me before!! I noticed when I went carnivore last year that I stopped having dandruff. When I went back on regular omnivore this year (after nagging from family), dandruff was one of the things I noticed came back, and particularly bad too. I thought maybe it had something to do with fungi that was suppressed on zerocarb, but it may also be an allergic reaction to something. It's not impossible that it's the coffee, although I didn't notice it last year, and I've always had coffee at least once a day.

On another topic. I've found myself craving ice cream too, lately! I became completely obsessed with sugar-free ice pops (from a popular drink mix brand). So much so I can easily consume 3-4 sticks in a day. When I miss the cream, I'll typically just have a glass of half-and-half (with kefir!). Though I've always remained low-carb. So I never consume pure sugars in any form (if I can avoid it). Even honey I stay off. It seems sugars prime my body for unhealthy cravings, and honey is no different.

Great recipe! Instead of cream (where I live all cream has carrageenan in it, which I avoid), I used mascarpone cream cheese and I whisked the egg yolks with 1/2 cup of boiled water just to be safe. I was thinking of adding monk fruit extract instead of honey, but I had really missed honey's taste so I did use it! Thank you for the inspiration!

Sorry you can not eat ice cream. My Mom let us have ice cream as kids in the 60s and 70s if we ate our supper. All 3 brothers love ice cream to this day. My older brother is the only one that has health issues. I limit my ice cream because I don't like buying larger pants. I like whipped cream with no sugar a lot. I think I am going to freze and mix cream and egg yoke like like you did in video and see what happens. Thanks
