I love my mom’s potato salad recipe so much, but CARNIVORE potato salad wasn’t something I’d ever seen, and KETO potato salad recipes have never given me the experience I hope for.
Now you can have potato salad on the KETO DIET and CARNIVORE DIET that actually tastes and feels like eating potato salad! This is a tweak on my carnivore mashed potato recipe. If you want to see in more detail the blending technique I use to make this mix, you can watch that video here!

Carnivore “Potatoe” Salad Recipe:

Potato Mix Ingredients
1/3 stick butter (About 3 Tbsp)
32 oz egg whites (25-30 whites)
Large pinch salt
2 oz cream cheese
2-3 oz fresh mozzarella
1 tsp Parmesan cheese
2 tsp toasted beef gelatin
1 Tbsp regular beef gelatin
4 Tbsp egg white powder
Heavy cream and water for blending (as needed)

Method
Melt butter over medium heat in non-stick skillet. Add egg whites and salt. Scramble egg whites breaking up into small pieces while stirring. Continue cooking egg whites until all liquid has dried up in the pan leaving crumbly eggs and residual butter fat. Stir frequently to avoid browning the eggs as much as possible, though a small amount is okay. Eggs will smell more like toasted butter and less like eggs and be very crumbly and dry. Remove from heat and leave in skillet to stay warm momentarily.
Add cream cheese, mozzarella cheese, 2-3 Tbsp cream, parmesan, toasted gelatin, and plain gelatin to blender. Add hot eggs on top. Turn blender on low. Using pusher through open hole in lid, continue encouraging egg mix to blend. If no lid opening and/or pusher is available, stop blender frequently and use a spatula or other tool to pop air bubble and continue blending. If mixture is too dry to blend add more heavy cream 2-3 Tbsp at a time as as needed and continue pushing mixture down into blender blades until mixture starts to blend. Use as little cream as possible to make this happen but as much as is required to get a cohesive paste. Slowly increase speed to high if adjustable. If not, increase in whatever increments available until blending on high. Mixture should be a cohesive paste and just begin to flow into blades and blend but should remain as thick and dry as possible. Add 2-3 Tbsp of water to thin this mixture slightly and blend on high 10-20 seconds.
Preheat oven to 275F.
Remove mix to a large bowl. Then add egg white powder on top one Tbsp at a time and fold and smash into egg paste mix until well incorporated. So this for each additional Tbsp of egg white powder one at a time until all are well incorporated with no lumps.
Spread mix flat on parchment lined baking sheet. Mixture should be about 1/2 inch thick and as squared off as possible for even baking. Smooth top and bake in preheated oven for 30 minutes.
Remove baked egg mix from oven. The mix should be dry to the touch and very firm and springy to the touch. Let cool enough to handle but still warmer than room temperature. Cut into cubes for potato salad. Add bacon, chopped egg, or other elements as you wish. I use 6 chopped hardboiled eggs and 10 bacon slices chopped and crisped along with their bacon grease.

My Potato Salad Sauce (herbs and spices are optional and flexible based on your preference)
1 batch spreadable butter mayo
Sour cream (equal amount to mayo)
1 tsp parsley
1 tsp chives
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp paprika
1 pinch salt
2 tsp apple cider vinegar
2 tsp Dijon
Blend all and refrigerate. Toss with potato salad and refrigerate overnight.

I'm telling everyone that I have had this potato salad dish and it is unbelievable how much it tastes like the real deal. You think eggs, it must be squishy, but it's not. It's like solid cubes of potatoes and no egg flavor. So goooooood!😋👍

I made this recipe for the 4th of July and wow it was amazing. I didn’t tell my husband or mother in law what it was made from, just that I made homemade potato salad. My husband is very picky and says he can always tell when something is Keto or carnivore. He said it was delicious and that I should make note of what I did so I could replicate the potato salad again. We had it 2 days in a row and they still loved it. The only thing was I did not add the bacon to the initial recipe but I did add it to the left overs for the second day. The addition of bacon was the bomb! So good. I want to tell him so badly that it’s made from egg whites but I’m enjoying this way too much. 😂

Hey everyone. For those looking for cubed potatoes for soups like clam chowders (New England style was great) or we just made a German Sausage and Potato soup that was fabulous. Just toss the cubes into the hot soup at the last minute or two and it’s perfect. Thanks Chris. 😋👍

@@ChrisCookingNashville Really you are under-selling this, this isn't Carnivore Potato salad, this is Carnivore Potatoes! If you made them Potato shaped you could serve them with butter and fool people I suspect. I think you should try making Potato shapes out of the "dough" and cook those and then after possibly covering with butter see if people even realize these aren't potatoes!? The only thing that made this not look like Potato salad was the potato was all cubed shape but that doesn't have to be!

I think there are lots of potential things that can be done with these. The flavor profile in certain dishes gives it away a little bit, but overall it’s pretty close. 😊

Unfortunately this mixture gets dry and crumbly when fried. Unlike starch proteins don’t take kindly to being cooked that long. I’m working to find some kind of solution still.

I made this recipe for a family reunion. I let everyone know what the ingredients were because of food allergies. Everyone thought it was great. It was fun watching their eyes get big and say (it tastes just like potato salad!). I had a few requests for the recipe and sent them here to your video. It took me about 2 hours to complete the recipe from start to finish. Including getting my pantry items and tools together. Well worth the time spent. Looking forward to your next recipe. Okay so I have to tell you that I made your potato salad recipe two days ago and brought it to a family dinner yesterday. I thought it would be an epic fail because I screwed the recipe up in a couple ways: first, I didn’t have the fresh mozzarella so just doubled the cream cheese, no biggie I thought… but then I also had a lot of trouble baking and drying out the fauxtato mixture in the oven, I ended up baking it about three times as long! Didn’t end up with perfect firm cubes like yours (it was much more rustic, shall we say)… Afterwards, I realized that I had completely forgotten to fold in any egg white protein powder(!). So, as a result the mixture was not firm enough, so then to rescue it I flipped it and just kept baking it longer lol…. Despite all this, everyone at yesterday’s dinner said they liked it and would never have guessed it wasn’t real potatoes. Will definitely make this again, the right way next time… also I have a ninja food processor, it has the blade at the bottom but another one halfway up, so getting the mixture finely smooth was quite easy, really without adding the cream and water, so next time I may omit that to keep the mixture more dry as well…. Anyways all this to say, thanks for the recipe, it’s a keeper! 😊

@@ChrisCookingNashville can't wait! A pie crust that can be sealed and baked with a filling would be incredible. My mom (a brit) always made a meat pie for special days. Similar in concept to a Hot Pocket, but, a full sized two crust pie with a beef chunks in gravy filling. Would pair so great with your carni-mash taters, too. I would so love to be able to do that and keep it carnivore. 😻🙏🙃😁

I can't wait to try the same technique for a German potato salad! Instead of a mayo/dairy based dressing it uses a combination of bacon grease, vinegar and sauteed onions. I think the "potato" cubes will work great with it!

I found you through Indigo Nili. She really changed my world with her bread recipes, and now these carnivore potatoes are doing the same! Really amazing and I can't wait to see what you come up with next! I made these last night using my Grandma's sauce recipe. I served them to my mom today and she was very impressed and went back for seconds! The texture and taste are spot on potatoes. I'll probably cut them more like 1/4 inch thick scalloped potatoes next time rather than cubes to be even a closer match to my Grandma's "real" version. It seemed like I needed to add a lot more liquid into the blender to get them to actually "blend" even using the tamper. It never did quite "flow" like you showed towards the end (I have an older Vitamix). A few more practice rounds and I think I'll get it. Thank you for sharing this amazing technique!

So, a follow-up to how good these were when fixed for us by Chris. My wife made these tonight to go with a bbq smoked pork shoulder that I cooked overnight. We usually fix the sauce version like Chris but this time my wife made our mustard and butter mayo version. It was fabulous. There is no way that if you weren't told what they were made of, you would swear it was potatoes. These can be as strict carnivore as you like, but we made it keto/ketovore by adding just a little mustard, onion, celery and a little Allulose. So goooooood and a great summertime treat. Great job Chris. This will be very helpful to those who need great tasting, healthy foods, other than a piece of meat and salt. 😋👍

I typically eat low carb as I'm an insulin dependent diabetic. I found your site through the Keto Twins and I'm going to try both the mashed and the potato salad. If you can figure out hash brown patties and potato chips you'll have discovered the holy grail of no carb eating. Well, in my opinion anyway lol!

Hello! I'm so glad you found me! So my mom is a type 2 diabetic and has actually gotten off all her insulin as a result of the keto diet and specifically my recipes as she has been able to bring her carb count down a little more each time she incorporates my carnivore recipes. I hope you find these to be helpful for you as well, whether that be to get off insulin or meds or just to improve, whatever is appropriate for you. Also, YES, I'm working on both those ideas! This recipe doesn't work as is for those, but I am absolutely in the process of searching for the solution. I agree with you it would make a massive difference for many. My best easy peel eggs came from - bringing your eggs to room temp - preheat air fryer for 5 mins, then place eggs inside, and good for 17 minutes at 270 degrees. Take eggs out -put in ice water for 5 minutes, remove and peel. The shells slide right off.

My Instapot makes perfect , easy to peel eggs every single time. 5 -5-5.....5 minute cook, leave in pot 5 min before releasing steam, 5 min in ice bath water.

Wanted to add this comment, if you are able to make carnivore mashed potato, then this potato salad, think what else you can make, all the possibilities!! Hashbrown, French fries, and Tater tots!!! Doing Ketovore because honestly, I’m a busy special needs mama and I love to take the time to cook ahead for myself, but HATE spending time weighing my food and measuring macros to make sure I stay in ketosis, so carnivore recipes are so low in carbs I don’t have to worry about even getting close to my carb threshold. Haha you’re welcome. As long as you get the egg mixture dry enough and then take your time getting it blended enough it should be no problem. Just fold that egg powder in well and the recipe does the rest. 😊😊😊

You can push you oven cooked egg thur a squared baking rack if you not good with a knife😂 Or a metal ruler and press down plus you can measure.

Yummy yummy looking....not yet mentioned but I love the fact you take the time to explain knife and tool techniques as you go. So many videos out there don't show these things or even worse show poor techniques. Now I want potato salad.
