Oh yeah, this is awesome! If you've been craving some ikea meatballs, this may satisfy your craving! I personally have never had them before, but this was so nice and different. If you make this, I'd love to see it on my instagram!
Meatballs:
- 1 lb Ground Beef
- 1/2 Cup Pork Rinds, Processed
- 1/2 Tsp Freshly Ground Black Pepper
- 1/2 Tsp Freshly Ground Nutmeg
- 1/2 Tsp Kosher Salt
- 1 Large Egg
Sauce:
- 1 Cup Gelatinous Beef Stock
- 1/4 Cup Sour Cream
- 1 Tbsp Unsalted Butter
- Fresh Ground Black Pepper
- A few splashes of worcestershire
- Salt to taste
1. Combine your ground beef, pork rinds, black pepper, nutmeg, salt, and egg in a bowl large enough to work in. Mix the ingredients together until no sign of egg yolk are streaking through the mixture.
2. Portion your meatballs into 3/4 oz meatballs or any size you want as long as they are all consistent.
3. Place your meatballs in a very lightly oiled pan that has been preheated over medium high heat.
4. Turn your meatballs every 3-4 minutes until center of the meatball reaches 155° F or your desired temperature. Set aside.
5. Add your gelatinous beef stock, butter, and black pepper into a pan and set the heat to high. Reduce this by half or ~7 minutes.
6. Once reduced, add your sour cream and worcestershire sauce. Mix very well. Reduce again until sauce has thickened or ~4 minutes.
7. Place your meatballs into dish of choice and pour sauce over. Serve hot.
