Carrot halwa
Serving size: 4-6
Ingredients:
Carrot-1 kg(grated)
Full cream milk-4 cups
Cashew-1/2 cup
Pistachio-8-10
Almond-4-5
Salt-1 pinch
Green cardamom powder-1 teaspoon
Ghee/ clarified butter-1/2 cup
Sugar-1/2 cup
Recipe:
Add 2 tablespoons of ghee in a heavy bottomed pan and fry grated carrots for a few minutes on low medium flame. Take another frying pan and add 2 cups of milk. Add 1 tablespoon cashew powder and mix it well. Boil the milk and reduce it a little. Now, add 1 cup full cream milk in carrot. Mix it and boil it on low flame until the carrot becomes soft. Add a pinch of salt. Then add cashew milk mixture and stir continuously. When time cokes to dry, add sugar and mix it well. Add ghee and stir continuously until the ghee leaves the pan. Add cardamom powder and garnish it with cashew powder, almonds and pistachios. Enjoy!!
