I make this as a little treat now and again because my husband who is Iraqi can't control himself and I don't want to be responsible for his or our children's expanding waistlines. I love watching your videos.

When I was a young boy and lived in Trinidad,I went to test cricket at QPO,during the lunch break I couldn't afford roti so I bought 20 cents of pone from a lady from Laventille, and that was the best pone I ever tasted,my mother's pone was closest to that.Today I am going to try and emulate those tastes that I was accustomed too.

Am from the Caribbean. My have a cassava farm. When pealing cassava the smooth flesh should be remove. Doing that will also help you to hold it well when grating. Thanks sooo much for this recipe, i've always wanted to make it. surly going to try it today. thank you

My grandmother was from Guyana and she made it in October for her grandchildren. Grandpa would crack the coconut and we'd drink the juice and grate the coconut and the pumpkin. Nanny used rock candy and put raisins in it. I've been looking for this recipe forever. Nanny's been gone now for about 20 yrs.

Have recently done this with carrot instead of pumpkin (pumpkin hard to find here), and added 2 eggs to hold it together more for going on a buffet. Worked really well. It also makes a different cake depending on whether you use frozen grated young coconut of dessicated coconut. I've also seen a recipe which suggests adding stem ginger in syrup or candied peel. Seems like there's endless variations of this dish.

Hey Chris, I know what you were talking about of the "wicked" smell. 20 minutes into the baking the house was buzzzzzzzzzzzzing with flavor. I did not use the pumpkin, but it was still AMAZING. I did the casava and coconut the old skool way. I made TWO PANS for church. NONE LEFT.

Loved it! Instructions were sooooo clear/easy to follow, I too felt like a baker. I have loved cassava & sweet potato phones forEVER but never had the courage to make either because of my limited (meaning NONEXISTING) cooking/baking skills. With your help though it was a hit! TY

Chris, I enjoy looking at your videos and love cassava pone. I was only introduced to it in my adult years by my friend who is Guyanese . I had no idea what it looked like but one day she made it in my presence, and I didn't feel like a stranger to it anymore since we make something very similar called potato pudding. Yes, potato pudding is also amazing. It's the same idea only that it uses sweet potatoes and cassava pone uses cassava. The only thing I keep asking myself and everyone else is, 'why is one called pudding and the other pone' . Nonetheless, it's equal deliciousness, and I make them both. Our ingredients vary slightly , but totally the same concept, and as an avid baker it's good to learn from someone else.

Ah, Chris. Thank you for that cassava line recipe. Mine is baking in the oven right now and it smells heavenly. I have soaked the raisins in Trinidad rum I bought on a tour of Angostura when I last visited Port of Spain. In my book, you can't bake with raisins and not get them drunk first. Thanks again.
