Some butter? That’s 400 calories worth, add the oil which is probably around 300, plus the rib eye itself which is almost 700, that’s around 1400 calories for a steak.

This is one of my favorite ways to make steak, I almost always do ribeyes on the cast-iron, mostly because it can be a challenge to find a charcoal grill since I live in dormitories.
@Eglateus
@Eglateus 2 жыл бұрын
If you haven't tried this you could also smoke the meat by putting it on a saucepan adding some oil/butter to a mini foil bowl then adding a hot charcoal to the foil bowl creating smoke instantly, leave it covered for however long you want or until there's barely any smoke left and then you season your meat and cooking it on the cast-iron.

There are many techniques; some good chefs say don't season at beginning with anything but salt and oil...pepper will burn & oiling 1 side of steak and not the pan is preferred or at most super lightly oil the pan, but definitely the meat. On the pan or grill right before the flip then oil the 2nd side of the meat. Pepper comes later. I've gone through 20+ videos and just put together ideas I'll try. Many ways and I'm not saying one way is necessarily the best

Don’t add anything but salt before you cook it. Season it after. The pepper and garlic powder will burn on the skillet. It will create a burnt/charcoal taste in the mouth, and some people think that that taste is supposed to be there. It’s not. It’s only there because you seasoned before. Salt before. Season after.

People disregard pan-seared stakes too much in my opinion. A perfect crust EVERY time with the hot oil. I like to use a high-quality cold press olive oil for my steaks to get a delicious, nutty, savory taste even without using butter (which i still use, Kerrygold, btw) and then rest it with a small amount of fresh kerrygold to have the fresh butter flavor along with the roasted, basted butter flavor. A lot of them will force themselves to eat a rare or blue rare steak because they think it’s more masculine to do so. If I’m cooking for others (not in a restaurant so I’m not charging money for friends and family I invite to a cookout), I tend to target just under their request because their definition of medium rare might be different from mine. If it’s not done enough, I put it back on the grill. You can’t undo overcooking though

What kind of oil do you use? I have tried several. Olive oil burns, avocado oil tastes like nuts and ruins the flavor, canola oil is pretty good but what oil do you recommend?

Don't use coarse grain salt. It creates space between the steak and the pan.

I grew up always thinking a grilled steak was the best. When I got my first apartment, I bought a cast iron pan because I always wanted one. Nothing compares to the sear you can get on a cast iron.

Might I suggest adding garlic, black peppercorns, and the spring of an herb like Rosemary or thyme to the oil just before you add the butter. I live in an apartment that don't have a grill, but that's how I make steak.

Is the 4 minute total including the first 2 minutes of searing and the 1 minute of basting mentioned? So does that mean 1 more minute afterwards? Also, I couldn't get the heat right. Is it on low, medium or high heat on the stove?

Hey Guga, thanks for your great videos. After watching your videos, I have three requests for future videos: - Please try some other cattle breeds than wagyu and American beef. - How do you clean all your pans and other cooking ustensils so they continue to be so shiny ? - Please cook a foie gras in a terrine using sous vide. And yes I'll repeat those requests often. ;)

I cook mine 2min on each side then finish with 30s basting each side. I like mine closer to medium. Im still try find a good seasoning combo. Ive used just S&P, then Montreal Steak, SPG, and now im using a TexJoy steak seasoning. Its pretty good
