It is criminal how short the segment of stage with Dance of the Holy Man is.

That track is called Theme of Simon Belmont. The name Dance of the Holy Man is a misconception

Some of this seems kinda suspect. First off, the water mage didn't switch sides, and when fighting the rock boss that special stayed around a little longer than it should have.

The wizard not swapping is most likely some sort of stunlock. As for the golem, that looks to be a result of slowdown. Much like how NES The Legend of Zelda struggled when multiple enemies appeared on screen, Bloodlines was slowing down between both the golem's movement and effects as well as the lightning spear's waves.
