Catch and Cook - Mantis Shrimp

Freshwater catfish are a staple of the USA southern states. Also the fish known as Basa / Pangasius sold cheaply at Coles, is freshwater catfish. I expect there might be a muddy flavour which could be compensated by cooking technique or purging for a few days in a tank. Anyway plenty of how to guides on the interwebs, you'll find something if you look. :)
