Great comprehensive video and awesome you're showing how to do it with spinning tackle! I almost always fish double nymph rigs and agree your approach and philosophy is spot on. Only differences in my rig (other than I fly fish with an indicator) is that I tie my anchor fly on a tag so the bottom fly isn't tied to eye. Since I'm usually fishing smaller nymphs, the eye isn't big enough plus its easier to change out the anchor fly. That water is particularly perfect for double nymphs because as you point out, the bottom nymph is freely moving around and the fish often take it instead of the anchor. A soft hackle type nymph or even a basic streamer is also great for the bottom fly. Also I find using a tungsten beadhead nymph as the anchor works great.
