Consider not cutting open the gut cavity on snapper. The meat quality can be affected by that nasty gut. It is pretty easy to cut over the rib cage. These aren't crappie or some other fresh water fish that has a relatively clean gut. There is stinky nasty stomach and gut contents that contaminate the meat with nastiness. FWIW
