I had a relationship like this except I was the chef and he was the babe. We had great fun and joy. He passed June 2021 after 37 years. I miss his laughter most. Y'all are a delight to watch and help me not feel quite so sad. Thank y'all for posting!

@@MrAdBountyit’s not just that. Frying the Thai basil (different than Italian or “western” basil) releases the flavour and gives it a textural depth to the dish. And because it’s cooked the taste isn’t as strong, but the scent it gives off really brings all the appetite to the table :) a lot of our appetizers uses these kinds of fragrant spices, and we call them 開胃菜, which literally means “open stomach dishes”

Aparentemente, por lo que leí en otros comentarios, tiene la función de ablandar la carne del calamar (también funciona con otras carnes como cerdo y ternera), porque el kiwi, al igual que la piña y la papaya, tiene unas encimas que ablandan las uniones de las fibras de colágeno que componen la carne. I'm not a good cook, but I am picky about calamari. I used to work the fryers at a sports bar. I would always fry them for 30 seconds in clean oil and they'd be tender and delicious. Fun memories of running around a busy kitchen counting out loud to 30 while the other cooks were like "that's a weird guy."

Kiwifruit contains a tenderising enzyme called actinidin, which can be used for short meat marinades, although you should be sure to keep the marinade to around a half an hour or else the meat can become mushy. Just as pineapple contains bromelain and papaya contains papain, all enzymes which can be used in marinades to tenderise meat.
