Hi Catherine this looks so good. Found a lovely homestead lady on y tube with home prep'd cake mix using my own ingreds and it's excellent and I just keep it in an airtight jar in the pantry and weigh out the same amount as in a box of mix. I add vanilla sugar to it. Thank you Catherine for all you lovely recipes, I will try this one too.👍💝🙂🇬🇧

This recipe is a great example of why I follow you: Real food for real folks! Growing up in the 70s, our moms always had a poke cake for dessert in the spring and summer months. It feeds the crowd and costs so little. Plus, it's delicious! I hope young moms are discovering your channel and discovering these great classic recipes. When my Grandpa was in ICU in bad shape after he was doing better and did not need thickened water and could eat, he could eat what ever he wanted, I made him strawberry poke cake cup cakes. He loved sweets. It's so simple but so big on yummy! I make poke cakes a lot for family get together too! I have used lemon cake with strawberry or raspberry jello.
