I always been told just use same amount of gulten free flour when making breads or cookies. For this maybe corn starch it's GF.

A British cauliflower cheese doesn't have to be mushy. You simply have to cook it upside down and right way up al dente before putting it in the oven with the sauce, and more cheese on top to make it grown brown. The idea is the cauliflower LOOKS like cauliflower at the table! The original recipe doesn't include onion. You actually don't need onion because you start with a roux, and because the cheese also thickens the sauce.
