Cauliflower au gratin was my favorite cooked veg as a young child, along with baked carrots, and French cut green beans with toasted almonds in 2nd and 3rd place.

This was an excellent dish. I made it for dinner this evening and it was lovely. This has radically altered the way I make cauliflower gratin henceforth. There's just no need for all that extra dairy fat with this recipe. Frankly, I can see this technique being adapted for other gratins as well.

This recipe looks delicious! I always love cauliflower to start with, I am going to do this recipe next I'm so looking forward to trying it. Much easier to do and not too fat either. The first time seeing Tim, he looks right out of high school, which is funny since he must have studied before joining "America's Test Kitchen" I love Julia she is such a great lady and she loves tasting all kind of foods.

Excellent...some of this crossed my mind the trick and key being steam the stems and puree them. Along with steaming the florets. This will solve my issues. Though I plan on a touch of sour cream and some Pepper Jack.

Joey Mama, This recipe is very nice, but sometimes you want something richer with more body. I love Ina's recipe, I make it nearly every major holiday. Chef John from the FoodWishes YT channel also has a great gratin recipe.

That actually looks like a delicious Cauliflower Gratin and much lighter than my old fashioned Cheesy one. As l watched this video l couldn’t help but wonder... How old is that young man? You cook the cauliflower by adding one head to a pot and cover with cold water. Boil water and let it boil for a minute. Then remove and draincauliflower. Rest it on a plate. After a while, the residual heat has cooked it.

I just made this, with two heads of cauliflower, and it came out quite tasty, but it took more than double the cook time. 25 minutes to steam the florets, and then an additional 15 to cook the stems, and 25 in the oven. That said, it was very tasty.

Thank, God, I know how to cook. I’ll be using my Vitamix to lessen the dirty pots & later for the Parm & Panko to be replaced by aged Cheddar & oven toasted fresh bread crumb topping with garlic, olive oil & Irish butter. Thanksgiving comes but once a year. My White Cheddar will be great on my orange cauliflower!

Using one head of cauliflower for the sauce to add over broccoli would be delicious! (Only have one head of caulk but plenty of broccoli so I'm doing that.)

I think half the battle is learning how to cut that cauliflower head properly as it can get quite messing and frustrating. Tim did a very helpful demo here!

That was nice,but i still to make the trad cheese sauce! And i diced& cook some Onion& celery which i mix in wity the sauce,then it goes over the Cauli& then bake..But like a Mac& cheese sauce,it's versatile so u can to it,whatever suits.( like with the cheese sauce,i add some Worcester Sauce& a shot of Hot sauce)

I accidentally made this without the cornstarch and it still came out really good. I missed that part when writing the recipe down lol. You could probably also add a little bit of flour whisked into some of the puree as well.
