Hi Dot, new viewer here. You can also drain the water but leave the veg in the strainer & the pot on the burner (turned off) and with the lid off, let the water evaporate for about 5 minutes. It’ll also let the veg cool enough for the processor step. I also use the yolk straining method you do! Learned it from food network about 20 yrs ago

Here is a new tip for you. Put raw cauliflower in your food processor and rice it, add to a hot skillet and simmer, stirring occasionally until most of the water is evaporated, then make your mash (; sour cream, cream cheese, or ricotta are other yummy items that make it creamy as well. I do like the egg yolk idea tho! 😁

I don't have the steaming tool, but I rice cauliflower all the time and wondered if that would be okay. I appreciate the comments saying it is. I'm also assuming it's 1 stick of butter, because it looks like it but doesn't say exactly.

I have just recently found your channel and igreatly appreciate your videos. Because of my exposure to Agent Orange I’m Vietnam I am diabetic and have had a couple of cancers. I just finished my last round of chemo and radiation I really have to watch my carb intake so this channel is becoming invaluable. Thank you for your work here. Hi Dot, many years ago, an elderly lady who had been a cook all of her life gave me a tip when making mashed potatoes. Drain them and return to the warm pan, then fold a clean tea towel into four and place on top of the potatoes in the pan then put the lid back on and leave for 5 minutes, this removes a lot of the moisture, the potatoes stay warm enough to melt the butter. I should imagine it would work with cauliflower. Once again another excellent recipe for me to try. Thanks

Dot2Trot's Low Carb Living I just put a Squash Casserole in the oven using home ground cashews and flaxseed meal in place of breadcrumbs. I've never tried it and couldn't find a recipe on KZbin where a Keto recipe didn't use Pork Rinds. I have nothing against it just don't find it where I live. So what are your thoughts on a Keto/Low Carb Squash Casserole? Would love a video. I'll let you know how mine turned out.

Excellent video. One thing to know is that after you steam any vegetable, don’t lift up the lid until the steam has stopped. Then slowly open the lid. Any vitamins that were about to escape with steam, will fall back into the pot. Wait about five minutes before lifting the lid. I prefer to use the small amount of liquid from the pot in the cauliflower mash. This way most of the vitamins are preserved. If you use a chicken stock to steam other vegetables like carrots, you can drink the liquid. It’s good for you and has vitamins.🙂

I microwave almost all fresh or frozen veggies in a covered dish, adding no water except what might cling to just-washed. They come out perfectly cooked with no extra liquid to drain or pat off. Any comments about whether microwaving affects nutrients?

I can't comment beyond just me thinking about it. You hear so many things. But all microwaves do is agitate water molecules, which create heat. Just like running a burner under a pot of water, the water heats up. So whatever boiling does to vitamins, I'd expect a similar result from a microwave. But I'm not a PHD, just me thinking about it.

Nice recipe. I use my Omega slow auger juicer to extra the water first. The juicer makes a nice dry pulp. It removes 90% of the cauliflower juice (which I save to drink). I then cook the processed pulp, and mix using a hand mixer. Am looking forward to trying egg in the mash.

Hello Dot. i was on the Keto Program for 3 months. i didnt loose any weight, in fact gained 10 pounds. esp a layer of blubber around my knees. im 66 and am insulin resistant, plus over weight by 65lbs. the latest fad that i tried was Whole30. and i did loose about 10lbs but that was all.(i was on the whole30 for 90 days.) wasnt really hungry either. Of course grain isnt allowed, along with dried fruit, or dairy. But with Whole 30 there isnt any sugar, but with whole 30 u get fresh fruit, veggies, and Meat/eggs ,and some nuts. after watching u cook i think i can go back to the whole 30 and ingrate your meals as my own. Just need to toss out the tv... im glad i stumble across your page.

Saute all your vegetables on a frying pan with a cover, this saves all nutrients and saves paper towels as well. if you are southern lady, use bacon grease, or if you are northerner use some of that butter.

Just a quick question Dot. I made a pizza crust with Cauliflower rice- 2 cups along with 2 cups of shredded mozzarella cheese and two eggs. Baked it at 425 degrees for 15 minutes. Do you think I can freeze the pizza crusts? :)

I'd be surprised if freezing it would come out as anything more than mushy, after the crystallization of the water in the cauliflower. That said, nothing wrong with trying.

Dot Apparently you have never watched Rocky where he drinks raw eggs all the time. I know a lot of people are concerned about that the raw egg, but the eggshell protects the egg and United States is one of the few countries that refrigerate them, most people in Europe keep them in a bowl on the table. You can tell people if they don't like it do it their own way.

Should be ok...try placing cauliflower in microwave proof bowl with enough water to cover bottom, cover with a paper towel and zap on high for 4-5 minutes.

Cuisinart - one of the BEST KITCHEN INVESTMENTS you will ever make. I first saw one used in the '70's in a cooking class given by the local electric company. Wanted one ever since - my Hamilton Beach finally died so I got one off Amazon in 2019. They are still impressive - even 40+ years later! Never have seen one better than Cuisinart!!!😊

Depends on your goals, whether you can use them. They do raise insulin levels. I'd use them sparingly, once in a while, etc. Stevia is good, and so is Xlan.

So I finally made Cauliflower mash in my Magic Bullet and it was a SUCCESS. I also put it over ground beef but decided I wanted "Italian" so I made the beef the way I would a meat sauce for lasagna but the consistency of sloppy joe. I added an egg and cashew milk mix over the ground beef in the casserole dish then mozzarella cheese, then the mash cauliflower, then more cheese. Baked it and It was REALLY good!

Easier and cleaner way to separate eggs use a plastic water bottle squeeze the bottle and it picks up the yolk and then pour it into another bowl ..its works ..just little advice and throw away the bottle or rinse it out and use it only for separating your eggs

Hazelnut is a great substitute for almond flour. Whatever almond flour can do -- breads, cookies, muffins, crusts, "bread"crumbs -- hazelnut flour can do the same. Just know that on occasion you may have to add a little more hazelnut than the recipe calls for (I'm talking maybe a tablespoon) if your batter is looking too thin.

i steam & eat those green leafies with the cauliflower. I saw Chef AJ do it. I regained my health & mobility at 65 by following her & Dr John MacDougall , by eating whole foods, plant based , high starch , plus lost 85 lbs in 25 months. No animal products , or highly processed foods . I too have gotten off meds & a cane, etc.. . I just started a small channel about my own journey. Praying your cancer was healed . Hey Roman, been on LCHF (low carb healthy fat) diet for 2 years now. No more pain, no more meds needed and lost 35 kilo of excess fat in the process. Feeling great! Congratulations on your decision to take your health through good nitritional intake into your own hands 🤓 The list of whole (unprocessed) foods to eat are bountiful! Check out Dietdoctor.com for all allowed foods, oils & drinks. There are many other good sources, which you will find mostly have the same foods listed. Remember all sugars, incl. fructose, sucrose, etc. should be avoided at all cost. Good Alternatives are out there (Monk Fruit, Stevia, Erithrytol) for desserts and X-Mas biscuits. Just google & research under Keto, LCHF or Low Carb. You can. Just freeze into portions. Use freezer bags and flatten them out for easy thawing.

Wow, I think you found the magic ingredient that makes it more potato-mash-like! Looks great! Mine is usually a little watery and grainy! I wonder if you could use a whole egg instead to save the waste of the white part?

You can certainly try it, but you'll need to watch the temperature. You want the egg to slowly heat up (not scramble!).

Cook it a little longer (to really soften the cauliflower) and go old school with a potato masher and use a whisk when adding in the other ingredients. Just go fast so the heat of the cauliflower can cook the egg yolks (if using). It might be a little more lumpy than creamy.
