That looks so elegant! Like a cross between cake and cheesecake. And lemon is just the happiest flavor and aroma. I'm wondering, too, if, for the sake of versatility, one could swap out the lemon and lemon zest for lightly toasted, finely slivered almonds and a little bit of amaretto? You'd have to experiment with the proportions a little, because amaretto's more concentrated than lemon juice. But then you'd have two cakes to choose from when you buy too much ricotta.

Hi AugustMeteors! I agree about lemon being a happy flavor! I think you could make an almond version of this cake and it would be wonderful. Not sure on how much amaretto to use, but you could experiment. Happy New Year!

I noticed that you started the video saying "ri-cott-a", switched to calling it "ri-coatt-a", and then return to "ri-cott-a" in the end!! Tomato, tomata. Ricoatta, ricotta... let's call the whole thing off!! LOL!! It does look like a delicious cake though, especially with the lemon... no matter how you pronounce it!! Take care!!

Hi Greg! Happy New Year! I'm with you: no matter how you say it the cake is delicious! You know how YT is, I am always getting scolded for saying things incorrectly so I try to cover every possible variation! LOL! It doesn't help - I still get emails telling me I'm wrong - but that's fine. The lemon in this cake gives it such a bright flavor. Hope your 2025 is off to a great start!
