I am so glad I did my research before buying a four knife set for $267 USD. My brother is really into cooking and he only has some cheap cooking knives, so for Christmas I wanted to buy him a really nice set. I went onto their website and something really bothered me with how they have 25k reviews and they have 5 stars. Nobody has 5 stars and perfect reviews. There is *always* going to be somebody who loves to complain for whatever reason, but I couldn't find a single negative review and that off alarm bells for me. Thank you so much for honestly reviewing this company and for giving the suggestion of Victorinox, I will definitely look into their sets!

Good that your bs detector went off. If you want to give him a nice set or chef knife, stick to the established brands. Like zwilling for example. The have been in business for almost 300 years for a reason. But there is other great brands too. Chef or restaurant supply stores are usually a good place to start looking.

Buy Chinese knives where Chinese people buy Chinese knives. I went to a Chinese butcher store 20+ years ago in Montréal Canada I bought a 9 in butcher knife and and large cleaver with a honing Steel. This is the only butcherknife I have ever owned in these years and it's the only one I use daily. You can hardly tell the difference between the original Edge close to the handle and the rest of the blade it's almost the exact same original grind. It's still very sharp, only honed for 20 years, still sharp. Full tang, solid brass handle inlaid with solid steel.

@@crucifieddemon7136 China has two qualities, the junk that they sell to the Western Society to make profit and the high quality stuff that they keep for themselves. They have been making knives for over 10,000 years. Common sense. @@crucifieddemon7136 one little word of advice. If you buy something that says made in China in English that's the junk stuff they sell for us if it says made in China written in Chinese that's the high quality stuff. The brand I keep seeing advertised is "Kamikoto", they are totally obsessed (in a marketing sense) with Japan, bragging about Japanese steel and basically mentioning it as often as possible, they're Japanese owned and based etc - when I did some digging, they are actually *made* in China of 420J2, at 53 HRC +/-2. A possibly 51HRC, 420J2 santoku from them costs almost $150 USD. Absolutely terrible.

The parent company specializes in getting as close to a scam as they can without getting into real trouble with the law. Terrible business model but it makes the founder some money through numerous scammy front companies.

I have friends who own a couple of Asian restaurants. They have been using the same cheap Chinese vegetable cleavers that you can get at an Asian market for under $20USD for years. They cut loads of vegetables and significant pounds of meat (50-100# of chicken at a time) and those cleavers hold an edge and are easy to sharpen. The Chinese know how to make a decent cleaver. These 2 companies just want to make shit and sell mass quantities of it. They don't care if it is shit as long as they make a buck. Those other cleavers are still readily available so a person can avoid the COOLINA and HUUSK crap cleavers. Thanks for the EMU scenes Pete!! Happy & Healthy New Year to you and your family!!!

If you can sharpen, you can take almost any knife of even decent steel and not-insanely-thick blade stock and make it work. I have an old carbon steel "Ecko Forge" knife I got off a supermarket rack hangar decades ago that still works well. When I was a kid I would sharpen it on a coffee mug. Cooked a lot of good meals with it over the years. As long as that potential is there, you're in good shape.

@@samuelhowie4543 Amen, any long time cook/chef, fish market worker, or butcher (people that spend their whole working day with a knife in their hand) knows that Dexter Russell or a Forschner/Victorinox works perfectly for the task. Cold Steel and Victorinox make great kitchen knives at half the price of these IG brands. Bought a Cold Steel chef knife for my wife to use because she doesn't want to use my custom in Aeb-l at 63 and ground to 0.008(she's a bit rough with knives and broke a tip of a custom paring knife I had) and she loves it. Comfortable handle, nice grind and their 4116 krupp holds an edge pretty good and takes a few passes on either 1k or 2k shapton to get back to razor sharp. Two Sun have a nice chef knife too, 14c28n and a micarta handle for about $50. I use it for harder tasks and its been a pleasure to use.

Try out the Arcos brand out of Spain. I recently picked up a few chef knives here in Mexico and I've been impressed for the price, around 20-30 USD per. Not amazing fit and finish and the edge has a few issues here and there but was easily fixed with diamond plates, ceramic rods and stropping in about five minutes.Edge retention seems decent.

Chinese cleavers are actually not intended to be hard use kitchen tools. They are the chinese equivalent of the chef's knife, and are often referred to as "vegetable cleavers". So, this knife having a thin edge is not necessarily a knock against it unless it was specifically advertised as a meat cleaver.

It's a real shame that this is the only comment I found where someone actually pointed out that this type of knife is a "vegetable cleaver".

You must not be in the know Pete, horseshoe plate quenching is the way of the future in heat treating. It’s adds a nice even bend in the blade lol

My victornox cleaver is strictly for processing occasional wild game. My Henkel cleaver I use as a veggie cleaver. Victornox doesn’t cut Brussels sprouts as well as other large, heavy knives. Still wouldn’t part with it, as useful as an ulu. It’s a great pizza knife!
