more of a medium well, but that's also pretty common with A5 wagyu, Medium is, anyway. There's literally so much fat distribution in the meat that you have to heat it to a higher temp to properly cook the fat all the way through.

Agreed Nick. My uncle was a butcher now retired and used make perfectly tasty burgers and sausages from the “ off cuts” as we call it in the U.K. he said nowadays so much on the animal especially the innards or offal as we say can be used for stews, Haggis, especially in Scotland, meat pies. Etc. we’d serve the pies and sausages to friends and they wouldn’t even know and say how tasty they was. But I guarantee you if you told half them they with innards based they’d turn their noses up at them. It’s definitely a western more English speaking world thing. You won’t see the Spanish, Italians, Greeks etc shying away from innards but definitely British and American people. We’ve become too domesticated through years of shrink rapped meat shopping at our super clean hospital like supermarkets, not going down the local butchers to farmers where a whole carcass would be hanging up outside or out the back like years ago. We need to bring that old school tradition back.
