I'm very open to any gravel tyre recommendations, top of my priority list is puncture resistance! I've got the Pirelli Cinturato Velo road tyres and I love them, so I'm wondering about Pirelli's gravel options...

cinturato Gravel M in the front and the H in the back. Perfect and no punctures untill now. Idem for the road tires I run the Cinturato Velo. A bit heavy but no punctures

You know what it is about a gravel bike that makes it fun, it's the terrain. Being out in nature on small tracks with no cars or noise and rolling fast. Its primal, it's meditative, it's good for the soul. Congratulations on your new bike and yes tubeless rules. I have run both the Pirelli M and H, for a winter tire in sloppy conditions definitely the M. They are not a slow tire, with that center rib they roll well.

Cough... sealant filled inner tubes... cough... 😉👍 That's what I use and I have never had to even stop for a puncture, and usually only know I've had one when washing the bike and spot the little green blob of goo on the tyre. There is a weight penalty of course, but I can put up with that to avoid the faff of setting up tubeless. Glad you enjoyed the ride regardless of the punctures and the weather, and you're pleased with the new bike - fun times ahead!

Vittoria Mezcal, Pirelli Cinturato (H for the dry season, rolling resistance is unbelievable and M for the rest).

i have the same bike. i switched my tires to the Pirelli Cinturato Gravel H. The stock Panaracer tires actually felt like they rolled a tad quicker than the Pirellis but the Pirellis have been (for me) bullet proof and setup tubeless very easily. I punctured 3 times on the stock tires so not unlike what you found!

Are they the Gravel King SK Sport? I know they have tubeless on the side but there are varying opinions online about if they can seal or if they are just an OEM tyre which should not have had tubeless on the side. Maybe worth an email to panaracer? They are a great tyre for on/off road mix for me. (Fellow Aspero owner)

I suffer with tubeless too on much cheaper bike tough from decathlon, tubeless ready hutchinsons and rims, rear and front tire are white from sealant penetrating tire also rear wheel leaks through the tape sealant coming out from spokes holes, so far bicycle needs tire check up before each casual ride.
