Have you seen the movie Klaus? It's also an animated movie that aligns with what you are looking for. Although it doesn't exactly focuses on Santa, rather on the aspect of how Christmas came to be celebrated the way it is. Highly recommend to watch it on Christmas!

Rankin and Bass (animated) Santa Claus Is Comin'to Town and The life and Adventures of Santa Claus. Christmas story 2008. Arthur Christmas. There's several more films that have Santa origin stories. Some have speculations that polar express is also a Santa origin story, that the kid, the conductor, the hobo ghost and Santa are all one and the same.
