12個綠豆椪材料
油酥
低筋麵粉 120g
無水奶油 60g
(不好成團時可以滴幾滴植物油,影片中使用的是1小匙的葵花油)
分成12份,一份約15g
油皮
中筋麵粉 180g
砂糖 10g
無水奶油 75g
冰水 75g
分成12份,一份約28g
餡料
綠豆沙 540g
分成12份,一份約45g

炒好的豬肉餡 150g
1份約12~13g
豬肉餡食譜:
豬絞肉 220g
油蔥酥(或紅蔥酥) 10g
白芝麻 10g
醬油 2大匙
胡椒 少許
把豬絞肉炒到出水出油後,將水份炒乾。之後加入油蔥酥和白芝庥,醬油,胡椒調味即可。炒好後放涼了,放入冰箱冷藏一夜。

Pork Stuffing Recipe:
220g ground pork
Crispy shallots (or shallots) 10g
White sesame 10g
2 tbsp soy sauce
pepper pinch
Stir-fry the ground pork until the water and oil come out, then fry the water to dry up. Then add fried shallots, white sesame seeds, soy sauce, and pepper to taste. Once cooked, let cool and refrigerate overnight.
