Oh my god, this guy is legit! Seeing that cutting board and him cracking eggs with one hand within the first few seconds. Not to mention his handling of the wok, it was almost a performance that accompanied the dish. He needs English subtitles! More people need to see this.

To me this is the best Chinese dish ever, it works wonderful with anything like bread,rice,noodles or pasta, and it's so easy to do, everyone should learn this.

1. Add in ketchup if the tomatoes are not that matured 2. A little rice vinegar in the beaten eggs can enhance the flavor 3. If you don't want the dish too soupy, skip the water starch part

minor tips: tomato paste is more accurate than ketchup. Ketchup is a kind of heavily seasoned tomato paste especially for dressing, while raw tomato paste is the one which carries the flavor of original tomato and wildly used in the cooking process.

This is to control the temperature of the wok, a very ancient and traditional way of Chinese cuisine. When preparing something rich in protein (meat,egg,etc) or coated with starch Chinese chefs do this so that the ingredients won't stick to the wok or stick to each other, and the vitamin E can be better kept too.
Hello everyone! Could anybody just list the ingredients Chef Wang used? I understand the technique, it's just that I don't speak a lick of Chinese and I'm extremely curious about the ingredients. My guess for the tomato mixture is ketchup, salt and/or msg, sugar, and a cornstarch slurry. If some kind person could affirm or correct me, I would be very thankful.
