I love that added point near the end, "I don't recommend to eat too often because this dish is heavy on salt," is such amazing advice on a cooking recipe. As an unhealthy American, we don't get many professional cooks warning about the dangers of eating too much of any singular dish, let alone eating too much in general. We have drugs for over-eating. =P I always love eating this dish since it's very satisfying on its own (most American Chinese restaurants seem to use pickled vegetable like ya cai with mushrooms instead of meat to make it vegetarian) with a giant bowl of rice, but I have often wondered about the dry-fry aspect. Even with a jet engine wok, it takes so long to fry...
Thank you Chef, for sharing your knowledge and methods. After being inspired by your videos, I cook more often and my family is happier. I can only hope for a Wang Gang cookbook.
I really enjoyed this video. Thank you for sharing this with us. I like that you get down to the business of preparing the food and explain the process without distracting from the food. I also appreciate the technical information provided at the end of most of your videos.
