This is one of Chad's favorite meals and one the whole family can get on board with. I'll walk you through the recipe, step-by-step, to help you create a meal I am sure your entire family will enjoy together!
📝 Honey Mustard Recipe✨
1 1/2 Cup of Dukes Mayonnaise
1/4 Cup of Grey Poupon Dijon Mustard
1/2 Cup of Honey
A touch of Horse Radish (About a 1/2-1 teaspoon)
1/2 Tablespoon of Pickle Juice (or similar acidic liquid)
A sprinkle of salt
A sprinkle of pepper
A sprinkle of Onion Powder
A sprinkle of Garlic Powder
Stir Well
📝 Prepping the Chicken ✨
Using a good chicken, make sure the chicken is 1/4” thick to ensure even cooking and to maximize the flavor during the marinade process. Using the honey mustard mix as a marinade, mix chicken and marinade in a Ziploc bag and let sit overnight. Be sure to flip the bag half-way through to ensure evenness of marinade.
Pro-tip: Prior to grilling, take chicken out of fridge (within Ziploc) and let it set to room temperature.
📝 Sautéing Mushrooms✨
Use Baby Bella Mushrooms (Rinse before preparing)
Pop off mushroom stems
Slice mushrooms
Once sliced, set aside
Consider wrapping sliced mushrooms paper towel as this will prevent them from becoming soggy.
In a frying pan, warm up on high
Add about 2 teaspoons of Avocado Oil
Once oil is warm, add Sliced Mushrooms
Stir and Spread Sliced Mushrooms Around
Let mushrooms simmer until brown and soft
Lower heat to medium
Add ½ teaspoon of minced garlic
Add ¼ tablespoon of butter
A generous sprinkle of salt
A sprinkle of black pepper
Add a dash of fresh lemon juice
Stir and let flavors mix together
📝 Preparing Crispy Bacon✨
Place Aluminum Foil on a Baking Sheet
Spread bacon evenly across foil.
Cook in oven at 425° for 16-17 minutes
Times may vary based on your oven
Once complete, cut/crumble bacon
Spread over chicken
📝 Cooking Chicken ✨
Set BBQ/Grill to 400°-500° for best sear
Place room temperature chicken on grill
Place biggest pieces first
Leave heat on medium high heat
Cook chicken for 3 minutes
After 3 minutes, flip chicken
Apply additional honey mustard over top of chicken
Cook chicken for 3 more minutes
Or until internal temp is at least 165° degrees
📝 Dressing the Chicken ✨
Add Sautéed Mushrooms on top of chicken
Add Crispy Bacon Crumbles on top of chicken
Add Shredded Cheese on top of chicken
Allow meat to rest for 5-10 minutes wrapped in foil
Doing this will allow flavors and juices to be locked in
