Our kids LOVE this simple to make meal (as well as helping to prepare it). We invite you to join us in the kitchen as we make a delicious Fish Recipe served with a simple Basmati Rice and absolutely perfect Asparagus! This recipe is filled with so many incredible flavors that it has become a staple for our family to enjoy - We hope it'll be one your family enjoys as well!

🐟 Steelhead Trout or Salmon
⏲️ Prep: 10-15 minutes | Bake Time: 12-15 minutes
Start by Preheating the Oven on Broil on High.
Using a baking sheet, line sheet with parchment paper to lay fish filet on.
1. Begin by slicing lemons which will be used later to hold butter on the filet.
2. Zest both an orange and a lemon to get about a tablespoon of each (to apply later)
3. Dry the fish filet using disposable paper towel.
4. Dash a consistent amount of salt all across the top of the filet (about 2 tablespoons)
5. Next, sprinkle a teaspoon of both garlic and onion power across the filet.
6. Crack black pepper consistently overtop the filet.
(These dry ingredients/seasons will act like a dry rub)
7. Next, take a tablespoon of minced garlic and spread across the filet.
8. Take Orange and lemon zest and sprinkle evenly across the filet.
9. Using 1 stick of butter, cut into tablespoon slices and lay consistently across the filet (this will help act as a glaze)
10. Using sliced lemons from Step 1, lay lemon slices overtop butter slices (this will hold the butter in place while cooking)
- After cooking, remove lemons from fish and try to collect juices to pour overtop of the cooked filet.
- Let rest for 5-10 min before serving
🍚 Basmati Rice
⏲️ Prep: 3 min | Bake Time: Around 30 min
1. Use 3 cups of Chicken Broth into a large pot.
2. Add 1 and 1/2 cups of Rice into the large pot.
3. Add 2 tablespoons of butter into the large pot.
4. Add a sprinkle of salt into the large pot.
- Set to boil on stovetop. Once it begins to boil, turn heat to low, cover with lid and let rest for 20 min.
- Prior to serving, add a squirt of lemon juice to the rice.
🟩 Asparagus
⏲️ Prep: 5 min | Bake time: 10-15 min in oven at 400°.
1. Slice bottom of asparagus off.
2. Put asparagus into gallon sized resealable bag
3. Add about 4 tablespoons of melted butter into bag.
4. Mix in about 2 teaspoons of freshly ground black pepper.
5. Add a teaspoon of salt
6. Add a teaspoon of garlic powder.
7. Add a teaspoon of minced garlic.
8. Squeeze in about 2 tablespoons of lemon juice.
- Mix ingredients in the bag until asparagus is mixed with everything else.
- Lay asparagus side by side on a tray lined with parchment paper.
9. Cook in over at 400° for 10-15 minutes.
10. Once out of the oven, sprinkle parmesan cheese over top of asparagus and let melt.
When all is prepared - SERVE AND ENJOY!

I made this meal after watching this video and had enough to eat at home with my grandson, granddaughter and daughter. Plus had enough to also share with my parents who are missionaries with JAARS. Thank you for sharing.

I used parchment paper under the salmon; broil on high and parchment paper caught fire! I think I salvaged it! 🤪. Love your precious family! 💕

Oh my goodness. Please do more cooking videos. I absolutely loved this. I do recommend getting Finley a suction plate with toddler sized silver ware, so that she can be independent and learn to eat on her own. (Coming from an early childhood educated, lol.)

Erin. The rice should be rinse well before cooking. It makes a difference. Rinse until water runs clear. It's not clean.

@@bethlear3998I disagree we only rinse rice once - I’m pretty sure the rice in USA is of a very high standard rinsing once is sufficient unless it’s basmati I would wash and rinse 3 times.

This takes me back to my childhood. My Mama had one boy and then us 4 girls. She taught all of us girls how to clean and cook. After my mama had my brother and 2 of my older sisters, my daddy decided to move from Look Out Mountain to Florida, where most of his siblings had moved. My daddy built a good size home and Mama then had us last 2 girls. We had lots of land to run around and play on but, by the time I was in the second grade our property seemed like it had been taken over by a lot of poisonous snakes so, he moved us closer to the coast near the beach. This time he bought a home for us in a neighborhood with paved streets and we made lots of new friends. My mom had high anxiety and she would never let us have a bike because she thought we would get hit by a car in our neighborhood but, she had no problem standing me on a chair and having me peel potatoes with a butcher knife to get them ready to cook for dinner. I think about that now and laugh but, I could have fell off the chair and stabbed myself. I think the bike would’ve been a safer choice but, God was watching over all of us and if there’s one thing I can do really well is peel potatoes. Lol. After I got married I promised myself I was going to get me a potato peeler and I did but, it took me so much longer to peel potatoes and felt so awkward that I ended up going back to that old butcher knife that I was given to keep by my mama. Every time I use it I think about her. Hope y’all have a wonderful Fourth of July. Hugs from the southeast coast of Florida

I remember watching you growing up on TLC. I remember how you couldn’t cook but boy have that change. You are a very good cook now, but you remind me of my sister me and mom did all the cooking and she really didn’t learn until she got married, and was out on her own. God bless your family.

looks great! I found out that soaking and rinsing rice before cooking is the key to fluffy soft rice.

A tip with rice, rinse it well before cooking it. Measure out your amount you want into your pot, using cold water, fill just over the rice, and rub the rice with your hands; squishing it, and swirling it with your fingers. The water will turn milky as the starch comes out. Pour this water off, and repeat until the water is clear. Then, add your broth, or water. Removing the excess starch will make it fluffy. ❤

@@donnabrant9031 From my understanding, Minute Rice is partially cooked so it’s not necessary. Just fluffing it with a fork while it’s still hot should help separate the grains.

Suggestions: If you buy automatic push button salt and pepper grinders, young kids can then always help salt & pepper when cooking. It's controlled and you just tell them to stop when the right amount is applied. Also, you can collect all of the salvage from vegetables as i.e. asparagus ends, carrot peels, tops, bottoms, tops and bottoms of onions, stems of parsley/cilantro, ends of green onions etc. in the freezer in a freezer zip lock bag, and keep adding to it as days go bye. Then use it to make a great vegetable stock at your convenience which can be frozen as well! 🤗

Looks delicious! But when you broil something, you move the rack up close to the top of the oven because that’s where the heat source comes from when broiling.

The softening the lemon and poking a hole to get the juice was a great tip!! Will definitely use that in the future. Also I always save those rubber bands my asparagus comes with. I use them to tie up food or chips or anything I need to when I run out of chip clips 😂
