Chal Potol-Nobo borsho special-Potol with Fragrant Rice-Bengali vegetarian recipe

Chal potol (parwal) recipe: Chaal potol is my mother's specialty that she makes on special occasions in the summer months-specially for Noboborsho or Poila Baishakh lunch, or when we are expecting guests for lunch. Potol (pointed gourd) and aloo is cooked with short-grained, perfumed rice like gobindobhog, and garnished with raisins and cashews for an extra flourish. This Bengali niramish (vegetarian) recipe of potol or parwal aloo'r tarkari is one of our favourite ways to eat potol.

Chal potol is nostalgia. It's the ultimate comfort food, one that I would probably even choose over biryani or other dishes! At home, we make it more like a dry pulao that can be had by itself, and it's my go-to food. Thanks always for sharing with the world these hidden treasures, and for giving us the confidence to try making them ourselves! Well I am totally new to bengali cooking.. Mane regular er ranaa and... Lost my mother a year ago and just trying to be a grihini... And then I came across bong eats.. Really helpful.. অনেকদিন আগে মা এরকম একটা রান্না করতেন, নাম সুগন্ধি পটল। তারপর কোনো কারণে সেটা বন্ধ হয়ে যায় বহু বছর। এই রান্না টা খালি স্বাদ নয়, আমাদের পুরনো বাড়ি, তার রান্নাঘর আর ছোটবেলার সব মুহূর্ত গুলো আবার এনে দিলো। Thank you so much Bongeats :)
