Had a good friend from Guam. His mother would do a simple one. Two cups of Soy Sauce, 4 cups of water. 2 onions chopped 3 lemons and this was used for chicken and pork. It was really good, through the years I have used it and added other things to it or sometimes just used the simple method.

Hafa Adai, Paula! My sisters and I are from Guam and LOVE this marinade. We left when we were still pretty little so we didn't get a chance to learn how to cook in this style. A couple of years ago I found and purchased your cookbook online. We like to get together often and make as many things as we can from your book. Keep up the wonderful and delicious work.

Paula, I followed your marinade recipe, and how to cut up a whole chicken, exactly how you show in your video. I did not do the brine, but as you suggested, let the chicken marinade for 24 hours. So easy, so simple, oh, oh, OH so good! This recipe is a keeper. It was delicious! I took some to work and shared with a coworker and she could not stop saying how absolutely delicious this chicken was and even asked for the recipe! It was flavorful, and perfectly seasoned. My personal taste is more on the savory side, so I did find the sugar to make the chicken just the tiniest bit sweeter than I like, so I will cut back on the brown sugar a little bit but otherwise, a perfect marinade! I can't wait to try it on ribs!!! again, thank you thank you thank you!

Ray, follow the marinade recipe, but marinate pork ribs (DON'T BRINE THE RIBS THOUGH)....OMG, you will be treated to ribs like no other!!! I clean and partially cut my ribs out of the package then marinate them for 24 hours in the fridge. Marinate the ribs for 24 hours and cook on a charcoal grill preferrably (but propane works too). It's the best!!!! I have to keep my Guam bbq cooking in-check cuz it's hard not to eat too much. Happy grilling and let me know how you like it!!

In my family we just put everything in a big container of some sort (storage bin from walmart) and its real simple Soy Sauce, Vinegar, lots of onions, seasoning and then throw all your meat in there we put beef short ribs, pork ribs, steak, and chicken. and cook over an open WOOD fire in an old drum (top part cut off and a hole cut on on the side of drum on the bottom and a some kind of grill mesh on top) and serve with Red Rice chicken keleguin and fina'denne nothing is better

Born and raised in Guam we never use salt or brown sugar. But I bet it does taste good the way you're making it but the way I know from Generations in my household who didnt use salt or brown sugar

The way I learned this recipe was to use equal parts soy sauce, rum, and vinegar, plus onions and mustard. No sugar. Its good for chicken, but really, really great for pork ribs.

*GUAM BBQ MEAT MARINADE and RED RICE* is *"What's Cooking Today in PaulaQ's Kitchen."* Guam marinade is strong and flavorful with soy sauce, vinegar, onions, garlic powder, and brown sugar. I marinated the chicken yesterday and it will go into the oven tonight for dinner. I know, it's not on the bbq pit, but cooking the chicken in the oven makes the house smell so delightful. When we do have company, I marinate pork ribs too and the boss throws it all on the grill outside. In addition to Guam chicken, I'm making red rice. Chamorros, the people from Guam and the other Mariana Islands, use short-grain rice that is cooked with annatto/achiote/achote, onions, seasonings, water, and oil. The achote gives the rice the orange-red hue and imparts that tell-tale flavor of Guam red rice. If the achote seeds are fresh, I use that and make red rice over the stove. Paula, We have been on Guam for a couple months now and love it. Do you know the recipe for the chicken on a stick that is found just about everywhere here? Do they marinate it something like this then glaze it with something? That is some of the best tasting chicken I've ever had!

+noytheyah Hafa Adai! There are some slight variations, but this is about the same type of marinade. I'm not sure about the glaze, probably a fresh batch of the marinade.

This is the cheater's recipe. Get some Yoshida's gourmet sauce, add Sprite, green onions, garlic, and some lemon juice and that's a glaze that's universal.. Try it.

That is not Guam BBQ chicken. For one, NO brown sugar and NO salt. Soy Sauce has enough. Also it has to be on the pit over and open fire. Here: 1 cup Soy 1 cup vinegar 1/4 cup lemon/lime juice - I prefer the lime 1 onion Copped garlic 1/4 cup Oyster sauce 4 hot Thai peppers copped

Too funny not grams marination, no brown sugar and definitely no salt. Only kikkoman soy sauce destlled vinegar , garlic powder, black pepper and chopped onions sit 5 mins. And throw on grill until cook and ur ready to chow😋😊😄😎😍
